If you love bread, you know how long you can spend wondering which one to choose first when you walk into a bakery. This time, I visited Boulangerie Tan Unjeong Main Branch in Unjeong, Paju :) There was a wide variety of bread and even sandwiches, so it looked like a nice place for a simple brunch too.

It is on the first floor of Farmstar Tower, so it was not difficult to find, and the parking was convenient enough that visiting by car did not feel like a hassle. These days, even when I am only going to buy one loaf of bread, I hesitate if parking is inconvenient—but that is less of a worry here. Especially if you are looking for a proper bakery around Unjeong, it is worth stopping by at least once.

I found this place while looking for a good bakery in Paju Unjeong, and I liked that it is more than a bakery that simply sells bread: you can enjoy sandwiches and coffee together, too.

## The open kitchen and shop atmosphere

As soon as you walk inside, the bread-making area is the first thing that catches your eye.

It has an open-kitchen layout, so you can see part of the space where the bread is made. Personally, I like this kind of setup. Being able to naturally see where the food is prepared makes it feel a little more trustworthy :)

The inside had an atmosphere that made it easy to browse the bread and choose slowly, and it also suited enjoying a sandwich or bread with coffee. There were especially many kinds of sandwiches, so I thought it would be nice for breakfast, a light lunch, or weekend brunch.

At Boulangerie Tan, you can find everything from classic bakery items to sandwiches. The sandwich menu was what stood out most to me.

The most noteworthy thing about Boulangerie Tan's bread is its natural fermentation method. They say they use a naturally cultivated starter and cold-ferment the dough for more than 14 hours. Rather than making bread quickly, they consider it important to take the extra time required for natural fermentation.

They also say they use organic flour and French flour, with a principle of not using artificial additives such as dough improvers, emulsifiers, preservatives, or coloring. Since bread is something we eat so often, this would be especially interesting to anyone who pays attention to those details.

## How the breads I bought tasted

### Sweet pumpkin cream cheese ciabatta

The ciabatta's characteristically chewy yet mild bread held the gentle sweetness of sweet pumpkin, while the cream cheese blended in smoothly with a rich, nutty flavor.

This salt bread was lightly crisp on the outside, moist inside, and soft in its layers.

At the first bite, the rich, nutty flavor of butter came through, followed here and there by a subtle saltiness. It was a simple bread, yet one I kept reaching for 😋

### Brioche morning roll

Its appeal was a texture much softer and fluffier than an ordinary meal roll.

It had a gentle sweetness and the nutty flavor of butter, so it was easy to eat on its own and also paired well with morning coffee. When I lightly pulled it apart with my hands, the soft layers came apart so nicely that I kept picking them up one by one, haha.

### Onion basil chicken ciabatta

Chicken, onion, and basil flavors came together inside chewy ciabatta, making it filling enough to enjoy as a meal.

Boulangerie Tan Unjeong Main Branch left me with the impression that it is more than a bakery displaying pretty bread—it is a place that pays attention to its bread-making process and ingredients. Its use of a naturally cultivated starter for long cold fermentation, along with organic and French flours, is also a defining feature. What stayed with me especially was its commitment to the traditional natural-fermentation method without artificial additives. It is the kind of place with a clear direction: even if bread takes longer to make, they want to make it properly.

There is also a good variety of sandwiches, so it looked suitable not only for taking home a few pieces of bread, but also for having brunch with coffee. Convenient parking is another plus, making it reasonably accessible for anyone getting around the Unjeong area by car. It is worth looking into if you are seeking a brunch spot in Dongpae-dong, and if you love bread and coffee, it would naturally work as a Paju Unjeong café date course too.

Personally, when choosing a bakery, I care less about simply having lots of varieties and more about what ingredients it uses and how it makes its bread. By that measure, Boulangerie Tan felt like a place with a very clear point of view. On a day when you are craving bread or a sandwich in Unjeong, it is a place worth remembering for slowly choosing something to enjoy at home or for a light brunch :)
