Today I want to share a review of a really special and atmospheric meat restaurant I discovered while traveling in Jeju: Udae Jipbul-gui (straw-fire grilled).

When people think of Jeju, black pork usually comes to mind first, but this time I went for something different—deeply flavorful straw-smoked udae galbi! The quality of the meat, the unique sauce lineup, and the legendary fried rice all left me so satisfied that I'm writing up a detailed review.

## Parking at Jeju Udae: can you park right in front?

There's a dedicated parking area right in front of Jeju Udae Nohyeong branch (Udae Jipbul-gui). Since parking is probably the first thing you'll want to know before visiting, let me start there!

That said, the parking spots are limited, so during peak hours when it gets crowded, parking right out front might be difficult. If the lot in front is full, don't panic—I'd recommend using a nearby public parking lot instead! Park there and walk over calmly, and you'll have a much more relaxed meal.

## Inside Jeju Udae: the dining room and the window seats

The moment I walked through the door, my first impression was: this place is really clean and upscale. The dark-toned interior gave off a calm yet sophisticated feel. There was none of that greasy or cluttered vibe you sometimes get at meat restaurants—everything was kept spotless.

We got lucky and were seated by the window. Looking outside, the view didn't feel like the quiet, laid-back Jeju vibe at all—it looked more like some trendy hotspot in Seoul, haha. Eating meat in the middle of Jeju while feeling like I was in Seoul was such an unexpected experience. The atmosphere was great, making it perfect for a date or a family dinner spot.

## The five sauces and side dishes served at Jeju Udae

After sitting down and ordering the signature udae galbi, a neat spread of side dishes and sauces was set up shortly after.

What really stood out was that they brought out a whopping five sauces to pair with the meat—so much fun to try each one!

- Perilla leaf + olive oil sauce: a unique, appealing combo of subtle perilla aroma and smooth olive oil
- Minced chili pesto: finely chopped chili made into a spicy pesto that cuts through the richness
- Plain salt: lets you fully taste the clean, deep flavor of the meat itself
- Garlic sauce: sweet and pungent, exploding with savory umami
- Peanut ssamjang: regular ssamjang loaded with nutty peanuts for a special twist

Beyond the sauces, the basic side dishes were amazing too. There was a refreshing green citrus-based onion pickle to whet the appetite, a lemon cucumber pickle with citrusy zing, plus coleslaw and a spicy-tangy radish salad.

But the most surprising part was that they served tortillas as a default side! Tortillas at a Korean BBQ place—my anticipation shot up even before the meal started, wondering how that combination would work.

And then a bit later, the radish soup arrived... while waiting for the meat, I couldn't stop slurping it up.

## Watching the straw-smoking of the udae galbi at the table

While waiting for the food, we got lucky enough to watch the owner cook our udae galbi right in front of us!

He lit straw directly under the already-grilled meat, letting the smoke pour out and infuse the meat with a deep straw aroma.

Watching the gentle straw smoke wrap around the meat, and the direct flame add that deep smoky flavor, made my mouth water instantly. It was a performance that satisfied both sight and smell!

After the smoking process, the perfectly grilled udae galbi was placed on the grill along with shishito peppers and pine mushrooms. Haha, even looking back at the photos, it looks so delicious.

## How the udae galbi tastes and the best sauce pairings

For the first bite, I went with plain salt! Just a light dip to taste the meat's own flavor. The ratio of lean meat to fat was so perfectly balanced that the moment I bit in, my mouth filled with savory juices and I couldn't help but sigh in satisfaction. The meat was so tender it practically melted after just a few chews.

I tried the combination the owner strongly recommended: dip the udae galbi generously in the savory mayonnaise sauce, place it on a tortilla, then top with coleslaw and radish salad to wrap and eat. The harmony of savory meat and mayo with crunchy, tangy coleslaw and radish salad was like a perfect meeting of Western and Korean food—it was genuinely delicious!

It's tasty with all sorts of sauce combinations too! I was eating too eagerly to snap a photo, but here's a combo I personally found fascinating and highly recommend: try the meat with all three of these together—perilla leaf olive oil sauce, minced chili pesto, and garlic sauce.

Even without wrapping the meat in lettuce or perilla leaves, eating it this way gave the exact same fresh, vegetable-wrap sensation in my mouth as if I'd taken a big bite of a fresh veggie wrap! It was such a novel and impressive dining experience.

Eating meat alone can get greasy or repetitive after a while, but thanks to the five sauces and variety of side dishes, we kept mixing and matching different combos and never got tired of it, all the way to the last bite.

As we were finishing up the meat, I started wondering how to eat the remaining meat still clinging to the big bones. So to wrap up the meal, we ordered the kkakdugi (radish kimchi) fried rice.

The owner then took the bones back to the kitchen, cleanly picked off all the chewy meat still stuck to them, and piled it generously on top of the fried rice before bringing it back out! It was truly touching.

And above all, the texture of this fried rice was a work of art. Usually at a meat restaurant, you fry the rice yourself on the tabletop grill, and how crispy it gets depends on how long you press it down over the flame. But here, it comes pre-fried entirely in the kitchen, and yet every single grain still had that crackly, crispy scorched-rice texture.

The moment I took a bite, I understood exactly why it's labeled 'signature' on the menu. If you visit Udae Jipbul-gui, the main udae galbi is a given, but I'd strongly recommend making the signature kkakdugi fried rice a must-order, not an optional extra!

And finally, as we were leaving, the owner's thoughtful touch stood out—mouthwash and hairbands... even floss. Such attention to detail... I was endlessly touched.
