I only just noticed from the description that it's made with barley grains!! Right? Aren't you curious why a Western restaurant would even have galbi (braised short rib) pasta? Apparently the owner's father-in-law ran a galbijjim (braised short rib) restaurant for 20 years, and the owner used those secrets to create his own pasta. So it's delicious.............. The braised galbi is genuinely tender and spicy, and it sort of reins in the richness from the risotto and potatoes before it. The noodles soak up the sauce so well that they're sweet and cling to your mouth perfectly. We paired it with pizza and steak for our cheongmo, and the meat was seriously, truly not chewy — it's tender. Sometimes 'tender' meat still ends up impossible to swallow after chewing forever, but Brassway's steak, for real, is none of that. Nice and tender.
