## A warm wood-toned counter and a reservation-only feel

I visited Sushi Hibi, a Yeongdeungpo omakase sushi restaurant, for a friend’s birthday.

Inside, there is a sushi counter and a place to store your belongings. The warm wood-toned décor makes it feel cozy.

The settings are neatly arranged. There was a drinks menu, but I had brought tea, so I passed.

They have a range of drinks, including Yebisu draft beer, so if I visit for dinner, I’d like to have a glass.

Sushi Hibi, a sushi spot near Yangpyeong Station, is a Catch Table reservation favorite that is hard to get into unless you book early—especially on weekends.

I visited for the 13:20 lunch omakase seating, and even though it was a weekday, it was full.

The restroom is inside, shared by all genders, and kept very clean.

## What came with the lunch omakase

The appetizer was a soft steamed egg custard. Topped with shrimp and kabocha squash, it was even more delicately savory.

This was a seaweed and spear squid salad, with tangy vinegar jelly as the kick. The seaweed had a buckwheat-noodle-like chew that made the texture fun. Its acidity was perfect for waking up my appetite.

A piece of sea bass sashimi was served. It was thinly sliced and wonderfully soft. It went down so easily, with a texture unlike sashimi at a typical raw-fish restaurant.

Grilled Spanish mackerel came with grated daikon dressed in yuzu sauce. The clean flavor of the fish paired beautifully with the sauce.

And of course, the warm soup was delicious too—I got a refill.

## Sushi with sesame and green onion

Now for the sushi! The squid sushi had toasted sesame seeds inside. It was my first time having sushi with sesame, and surprisingly, it worked so well? The nutty sesame flavor went perfectly with the squid.

The sea bream sushi was topped with fried white parts of green onion. Its aroma suited the sea bream beautifully. The horse mackerel sushi had finely chopped scallions on top. I was told half a horse mackerel went into one piece, and I loved its clean flavor.

This is ankimo (monkfish liver), which I absolutely love. They piled it on generously, so I could really taste the mild richness of the monkfish liver.

It’s one of my favorite things, so I even filmed the making process. Looking at it makes me want it again.

The yellowtail sushi was so deliciousㅠㅠ I ate it so quickly that I didn’t get a photo. It had a sauce mixed with yuzu and chili inside. The aromas worked wonderfully together.

And mackerel sushi, another favorite of mine! I had only eaten this kind of mackerel in Jeju before, so it was nice to have it in Seoul. Topped with a mix of shiso, scallions, sesame, and pickled ginger, it had an exotic aroma. The lean tuna and eel sushi were beyond words—their nutty richness was superb.

## Futomaki, udon, and strawberry sorbet

Futomaki (thick sushi roll) is something I always order at sushi restaurants. A plump futomaki packed with raw fish is love, haha. I was lucky enough to get an end piece and enjoyed it.

A moderately sweet gyoku, or Japanese rolled omelet, was served. I’ve occasionally found gyoku too sweet to enjoy, but Sushi Hibi’s was just sweet enough and made a nice palate cleanser.

The Kyoto udon was distinctive for its chewy texture: the noodles were springy and satisfying to bite into. The broth was deeply flavored too, making it a good closing course.

For the final dessert, there was strawberry sorbet. This cool sorbet captured the freshness of strawberries just as they are, making it perfect as an omakase dessert.

## Well-priced Yeongdeungpo omakase

Sushi Hibi, a sushi spot near Yangpyeong Station, offers sushi omakase at a reasonable price. At ₩50,000 for lunch and ₩100,000 for dinner, it feels affordable considering current prices.

Does that mean the taste is inexpensive too? Not at all. The chef’s varied experiments let me try sushi with fresh topping combinations. Using unexpected sushi toppings such as scallions and sesame made for distinctive pairings. I’ll be back next time!
