## In short

Jangwongap Kalguksu Yongin Giheung Branch is a shabu kalguksu (Korean noodle soup) restaurant on Gomae-ro in Giheung-gu, Yongin, Gyeonggi. The pot is boiled right at the table, and the noodles are scooped out three times at 5, 8, and 10 minutes by sand timer, with a whole-shrimp seafood pancake and fried rice ordered alongside. One pot of noodles tasting different at each stage made the meal at Jangwongap fun to eat from start to finish.

On a day when I wanted both warm broth and crispy pan-fried pancake, I headed to Jangwongap Kalguksu Yongin Giheung Branch. I figured one bowl of kalguksu would taste pretty much like any other, but this place was different — instead of scooping out all the noodles at once, they let you enjoy the changing texture across 5, 8, and 10 minutes. Once I tried it myself, I could kind of see why this place keeps coming up as a go-to spot in Gomae-dong, Yongin.

## Kalguksu boiled right at your table at Jangwongap

> It was way more fun because we boiled it ourselves

The kalguksu at Jangwongap Kalguksu Yongin Giheung Branch doesn't arrive as a finished bowl — it's boiled at the table as you eat. Once everything was set up, the generous portion caught my eye right away. The broth started bubbling and gave off a savory aroma even before I'd taken a bite, and as the ingredients cooked further, the broth seemed to deepen too. Even the waiting felt like part of the course.

What made it especially fun was watching the sand timer and tasting the noodles change over time. Their official website actually emphasizes a 60-year noodle-making tradition, and tasting it firsthand, I got why the noodles don't easily fall apart or turn mushy no matter how long they cook.

This unusual method felt like the kind of thing that would stick in your memory if you're looking for a Gomae-dong, Yongin restaurant worth remembering.

## What do the 5-minute noodles taste like?

> Chewy at 5 minutes

Once the broth was boiling and the noodles went in, the first tasting came at 5 minutes. Scooping out noodles cooked for about 5 minutes, the outside was softly cooked but the inside still had firm elasticity.

With every bite there was a springy bounce, so if you like chewy noodles, this is probably the moment you'll enjoy most. The broth was also still fairly clear and clean at this point, so the plain flavor of the noodles and the refreshing broth both came through well. The trick was not scooping out all the noodles at once — just take a little at 5 minutes and let the rest keep cooking.

## Why the 8-minute noodles are the most balanced

> Soft and moist at 8 minutes

Next I tried the noodles at around 8 minutes. Just three more minutes of cooking, but the texture felt noticeably different from the 5-minute noodles. The initial taut bounce softened a bit, and the broth had soaked in enough to make the noodles much moister and fluffier.

The outside was smooth while the inside stayed chewy, and personally, the balance at 8 minutes was my favorite. The noodles carried just the right amount of broth flavor while still keeping that classic kalguksu chew, so my chopsticks kept going back for more. Getting to enjoy several textures from a single batch of noodles made this feel less like just filling up and more like slowly savoring the noodles' transformation. That's why I'd recommend this spot to anyone looking for a Gomae-dong, Yongin restaurant to visit with family.

## How the noodles and broth change at 10 minutes

> Soft and rich at 10 minutes

Last was the noodles boiled long enough to reach 10 minutes. By then, the noodles had soaked up plenty of broth and plumped up, turning comfortingly soft — soft enough to give way easily even under light pressure with my tongue.

![Soft kalguksu noodles and rich broth after 10 minutes of cooking](https://img.superchart.com/images/jangwongap-kalguksu-yongin-giheung-noodle-timing/jangwongap-kalguksu-yongin-giheung-noodle-timing-10-8eozu-966.webp)

Despite the long cooking time, the noodles didn't snap apart or turn overly mushy — instead they blended naturally into a soft, comforting kalguksu. With starch released from the noodles, the broth also turned thicker and richer than at the start.

- 5 minutes: clean, chewy noodles, relatively clear broth
- 8 minutes: moist and fluffy, smooth outside with a chewy inside
- 10 minutes: noodles and broth fully blended into a soft, deep flavor

Even though it was the same noodles from the same pot, the flavor and texture changed so much over time that it felt like eating three different kinds of kalguksu in a row.

## How the whole-shrimp seafood pancake pairs with the noodles

> A whole-shrimp seafood pancake loaded edge to edge with toppings

Alongside the kalguksu, we also ordered the whole-shrimp seafood pancake.

True to its name, the pancake arrived piled generously with seafood, looking appetizing the moment it hit the table. The edges were golden brown, and pulling off a piece with chopsticks gave a satisfying crisp sound. The outside was crispy and the inside moist, with the fragrance of scallions and the savory depth of the seafood coming through richly. The whole shrimp in particular gave a clear, springy bite. Dipped lightly in soy sauce, the salty flavor blended with the savory batter, and following it up with a sip of hot kalguksu broth cleaned the palate nicely.

Eating just the pancake on its own can start to feel a bit heavy, but the light broth stepped in to balance things out, so the two dishes paired really well together. If kalguksu alone isn't quite enough for you, I'd recommend ordering the whole-shrimp seafood pancake too at Jangwongap Kalguksu, a solid Gomae-dong, Yongin restaurant pick.

If you're looking for a Gomae-dong, Yongin restaurant where the eating process itself is fun rather than just an ordinary bowl of kalguksu, I'd suggest trying Jangwongap Kalguksu Yongin Giheung Branch and comparing the 5-, 8-, and 10-minute noodles yourself. And don't skip the fried rice at the end!

Next time, I don't think I'll hesitate for a second before ordering the kalguksu and whole-shrimp seafood pancake together again. :)
