A restaurant you love doesn't end with one visit. If the memory of the taste lingers and you find yourself wanting to try another menu item next time, you naturally end up going back. That's exactly how it was with Chilseong Jemyeonso Suji Main Branch, a well-known spot near Seongbok Station.

On this visit, something new caught my eye out front — a new concept phrase, '33 life noodle dishes specialist.' The big sign standing outside made it clear they're trying to expand the identity of the space around noodle dishes.

Before, the impression was mostly of a restaurant serving all sorts of things — pork cutlet, jjolmyeon, buckwheat noodles, udon. Now they seem to be putting more weight behind the name 'jemyeonso' (noodle-making house).

This visit was at weekend lunch. Last time I came around 8pm, a bit past dinner rush, but this time the atmosphere was completely different. Lunch-hour crowds packed in and there was even a wait.

The place still had that cozy, tidy feel I remembered, but now it seemed to be chosen not just as a casual neighborhood spot but as a weekend dining destination too.

## What we ordered this time

This order was 100% Korean whole loin pork cutlet ₩13,500, real cheese pork cutlet ₩14,500, Chilseong cold jjolmyeon ₩10,000, and fresh wheat noodles ₩8,500. Since the place was pushing a new concept, I wanted to check the noodle quality for myself. I re-ordered the pork cutlet I loved last time, and this time picked noodle dishes fitting for a 'jemyeonso.' Being able to get pork cutlet and noodles in one place is a clear strength here.

In the end, the most important thing in a noodle dish is the noodle. No matter how good the broth is, if the noodle texture falls apart, the whole thing suffers. The fresh noodles here have real quality on their own. The balance between chewiness and softness felt in the mouth is stable, and that distinct fresh-noodle bite comes through clearly. Even mixed with the broth, the noodles don't get lost — they don't turn overly soft or mushy, keeping just the right texture to the last bite.

Rather than a noodle dish that wins you over with bold flavor, it's more about calmly enjoying the harmony between noodle and broth. If pork cutlet and jjolmyeon leave a strong impression, the fresh wheat noodles sit quietly in the middle, holding a clean center. Given the new '33 life noodle dishes specialist' concept, at least in this dish you can feel a noodle quality that lives up to the name 'jemyeonso.'

### Chilseong cold jjolmyeon

The Chilseong cold jjolmyeon is, once again, delicious. It's almost a shame I didn't try this on my last visit. The chewy, springy texture typical of jjolmyeon clings well to the tangy-sweet-spicy sauce. One bite and your appetite instantly wakes up.

What I especially liked was that they don't skimp on vegetables. Cabbage and various other vegetables are packed generously between the noodle strands, keeping a crisp texture alive. Jjolmyeon can sometimes feel dominated by just sauce and noodle, but the abundant vegetables lighten the overall density of flavor. It also pairs well with something greasy like pork cutlet. A bite of crispy cutlet followed by a forkful of tangy-spicy cold jjolmyeon resets your palate completely. Personally, this was the standout dish of the whole order.

This return visit made the strengths of Chilseong Jemyeonso Suji Main Branch, a well-known Seongbok Station spot, a bit clearer. This isn't a place that's only good at pork cutlet. Crispy cutlet, rich cheese, tangy-spicy jjolmyeon, and well-made fresh noodles — every dish has its own distinct character.
