I went on a family outing to Gapyeong after a long while. I wanted a slightly special lunch that day, so I visited Pinoli, a Gapyeong restaurant known for making its entire menu by hand. I've always liked handmade Italian cooking, so I had high hopes for this pasta spot. Pinoli is run by a cooking instructor who has studied and taught Italian pasta for a long time, and the standout point is that everything, from sauces to dressings, is made in-house.

Pinoli is located at 1F 111, 12 Jangteo 2-gil, Gapyeong-eup, Gapyeong-gun, Gyeonggi-do, near Gapyeong Jatmaeul Market. This area has a lot of Gapyeong restaurants clustered together. The building's exterior had a distinct atmosphere from the start — stylish graffiti and floor-to-ceiling windows caught my eye first, and the round sign and potted plants by the entrance gave the whole place a calm yet exotic feel. I arrived around lunchtime and luckily got seated right away without waiting.

For parking, I used the public parking lot at the Changup Economy Town inside the building. There was parking signage on the building's exterior wall, so even as a first-time visitor I found it without much trouble.

## Inside Pinoli: the room and the menu

Walking into Pinoli, the wood-tone interior, pastel-colored walls, and soft lighting came together for a warm atmosphere.

The tables were spaced generously apart, which made it comfortable to eat with family. Beyond pasta, they apparently make lots of other dishes by hand too, including lasagna, risotto, meatballs, salad, and desserts.

Prices were clearly marked on the menu, so it was easy to look through at a glance. While we were browsing, the owner kindly gave us extra explanations, which made choosing our pasta dishes much easier.

The first dish to arrive was the open jambon sandwich. The plate came generously topped with jambon and arugula. The plating was so clean I ended up snapping photos first.

The jambon used at Pinoli is apparently made by the owner. One bite in, it wasn't overly salty — instead I tasted a savory, mild meaty flavor. There was still the characteristic saltiness of jambon, but the seasoning wasn't excessive, so it paired well with the bread and vegetables.

The bread was crisp on the outside and soft inside. Eating the jambon, arugula, and cheese together, the salty flavor and fresh vegetable taste blended nicely. Personally, this was a dish I'd want to order again on a return visit.

## Signature Pinoli pasta with mafaldine noodles

Next up was Pinoli's signature dish, the Pinoli pasta, made with mafaldine noodles. The sauce was savory with a slight kick of spice, so it wasn't heavy to finish.

Mafaldine is a wide noodle with wavy, ruffled edges, and the noodle itself held a lot of the sauce, so every bite delivered plenty of flavor. The cream-based sauce with bacon and mushroom was quite rich and savory too.

Twirling the noodles onto my fork, the chewy texture was great too. Cream sauces can easily feel heavy, but the spiciness of peperoncino balanced things out well. Of the three dishes, this one felt the most like a true signature, carrying the restaurant's name. Definitely lives up to being a handmade pasta spot.

## Aglio olio with arugula and anchovy

The last dish we tried was the aglio olio pasta, made with arugula and anchovy. I worried the anchovy smell might be too strong, but in practice it was a subtle, salty savoriness that wasn't overpowering at all.

The oil, with garlic well sautéed into it, combined with arugula's slight bitterness for an overall clean and easy-to-eat dish. Cheese added on top brought a savory richness as well.

This wasn't just a garlic-forward aglio olio. The salty umami of the anchovy melted naturally into the oil sauce, leaving a subtle lingering flavor even after eating.

## Who should eat at Pinoli in Gapyeong?

From the open jambon sandwich to the Pinoli pasta and aglio olio, each dish had a distinct flavor, so it was fun sharing a variety of menu items. What stood out most was that so much, including the sauces and jambon, is made in-house, and that they use local Gapyeong produce. If you're looking for a somewhat different Italian pasta spot rather than the usual Gapyeong menus, or a pasta restaurant with handmade pasta and sandwiches, this place is worth a visit. Next time, I'd like to try the lasagna or risotto that I didn't get to this time.
