Of everything I ordered at Min Cook Misoyaki that day, the salt-grilled salmon neck caught my eye first. Hearing 'raw salmon' might make you expect a sashimi dish, so serving it salt-grilled felt like a fresh twist.

Eating it, the salmon's signature soft, moist texture was still there, along with the clean flavor typical of salt-grilling. The outside was gently seared with a savory aroma, while the inside stayed moist rather than dry.
