Hotcho Seongsu is a Japanese restaurant in Seongsu-dong that claims to recreate okonomiyaki, the soul food of Hiroshima, exactly as it tastes locally. Okonomiyaki has become so common and familiar by now that we can easily make it at home, but finding one that's genuinely, mouth-fillingly delicious turns out to be surprisingly hard.
