I'm usually not a fan of the dry, tough parts of jokbal, but there wasn't a single dry piece haha. The skin was springy and chewy, while the meat was soft and tender! Eating the skin and meat together gave a perfect combination of chewiness and juiciness, and the texture was really great haha. The seasoning wasn't too strong or sweet — just a subtle savory saltiness that kept me reaching for more.
