They grill the meat for you right there — apparently the French rack is usually cooked medium rare and the lamb chops medium, but they'll grill it to whatever doneness you want! It's a combo of gondre rice, pollack roe, special sauce, and seaweed — if you don't order it you're a fool, a fool!!! You mix the nutty gondre rice with salty pollack roe, wrap it in seaweed with some meat on top, and it's just... amazing👏👏 I kept gasping the whole time I ate it. Every lamb place I'd been to before, napkins were the best you got..?
