# Charcoal-grilled sea bream at Tansaeng, a Changwon bar

## Inside a Sangnam-dong charcoal-grilled fish izakaya

A very distinctive new spot has opened in Sangnam-dong, Changwon: Tansaeng Sangnam Branch (탄생 상남점), an izakaya specializing in charcoal-grilled fish. Going beyond the usual izakaya menu and putting charcoal-grilled fish front and center was so intriguing that I visited with high expectations.

As you would expect from a newly opened izakaya, the clean, modern interior caught my eye the moment I stepped in. The seating layout is wonderfully varied, too.

From intimate two-person marble tables to generously arranged main tables in the hall and private rooms for up to six people, everything is perfectly set up. It would be great for a Changwon date, a Sangnam-dong company dinner, or a gathering.

But to properly enjoy that distinct izakaya mood and romance, we did not hesitate to take seats at the counter.

## Ordering flower sea bream and draft Hanmac

Since we were at Tansaeng Sangnam Branch, we could not possibly skip its signature charcoal-grilled fish. Choosing a fish was a lovely dilemma. Salmon or Spanish mackerel would surely make fail-safe, excellent drinking snacks once grilled over charcoal, but this time we decided to try something less commonly found: grilled flower sea bream.

For drinks, we ordered refreshing draft Hanmac beer alongside it.

## Waiting for the charcoal grill at the counter

Because everything is grilled over charcoal once you order, it does take a little time. But seated at the counter, even the wait was enjoyable.

(Sorry, fishies—you look delicious... They were seriously huge. They grill them whole at this size.) In one corner of the kitchen, large fish awaiting preparation hung there appetizingly as they aged, while fresh seafood such as plump shrimp and scallops was neatly displayed in a glass showcase.

They even had charcoal-grilled lamb rib steak. We had already filled up on meat for our first round, so regretfully we passed, but it gave a glimpse of the owner's exceptional pride in the ingredients.

Charcoal-grilled fish does take a little time to cook, so we had a quick look around the restaurant. Fish waiting to be cooked were hanging and aging. Grilled shrimp and scallop meat were also sold as sides, and the fresh seafood on display really caught my eye. There is charcoal-grilled lamb rib steak, too! We came here for a second round after eating meat, so we passed on it, but it was one of the dishes I wanted to try. Seeing the fresh ingredients displayed just as they were, I could feel the owner's confidence in them.

Some simple side dishes and beer arrived. It was honestly so hard not to drink the beer while waiting for the grilled fish.

The process itself was a spectacle: gentle heat came from the real charcoal below, while a torch above carefully added its smoky fire flavor. The curling smoke and the nutty aroma of grilling fish made my mouth water on their own.

## Crisp skin and moist flower sea bream

At last, the long-awaited grilled flower sea bream arrived at the table. What especially impressed me was that it came with five special topping sauces, including grated radish soy sauce and chili pesto. Only then did I finally take a refreshing gulp of beer.

After that sip, we properly got into the grilled flower sea bream, and it tasted absolutely excellent—nothing short of what I had hoped for. Above all, the contrast between the beautifully browned skin and the tender flesh was fantastic.

With the right balance of charcoal and torch, the skin was crisp while the inside stayed moist. The subtle charcoal aroma brought the fish's own flavor to its absolute peak.

Just as the flavor might have begun to feel a little plain, the five special toppings brought varied twists to the potentially simple grilled fish and doubled the fun of eating it. Chugging a cold, well-maintained draft Hanmac alongside such a great drinking snack felt like washing away the day's fatigue.

Draft beer can taste wildly different depending on how a venue maintains it, but here it retained beer's own clean, refreshing flavor with none of that off smell. If you want both an unusual special dish and a modern atmosphere, I strongly recommend Tansaeng Izakaya in Sangnam-dong.
