It was my first visit since the restaurant moved, and before that I had been here at least 10 times—it is a truly, truly real-deal favorite.. ><

The look alone was spot-on: big bones generously covered in tender meat. It also came with tteok (chewy rice cakes), so it worked wonderfully as both a full meal and something to have with drinks! Adding udon noodles is not a choice—it is essential ♡

## The atmosphere at Paldo Ppyeogui Suyeong Main Branch

Paldo Ppyeogui Suyeong Main Branch is easy to spot even from afar thanks to its huge orange sign, haha. The front of the restaurant is glass, so you can get a preview of the atmosphere inside from outside, and I think it naturally catches your eye when you pass by and wonder about the menu.

Inside, the wood and black color palette created a comfortable atmosphere. The space between tables did not feel cramped, and the whole restaurant was kept very neat. It looked good for a meal with friends or a date, and easy enough for a larger group to visit too. It feels memorable because you can have an unusual meat dish rather than the typical grilled-meat menu.

## The side dishes that supported the heat

Once you sit down, the basic side dishes arrive: kkakdugi (cubed radish kimchi), baek kimchi (mild white kimchi), cabbage salad, potato salad, and more. Paldo Ppyeogui's sauce is rich and on the spicy side, so having baek kimchi or salad in between made my mouth feel much fresher. The soft, nutty potato salad went surprisingly well with the spicy sauce in particular, and I kept reaching for it. The side-dish spread was not basic, so I was pleased from the first impression. As you eat, you will definitely end up asking for another serving of coleslaw. So addictive.. ☆

A fluffy steamed egg custard also comes as a basic side! Warm and soft, it balanced out the heat and paired well with Paldo Ppyeogui. If you are not great with spicy food, I recommend ordering steamed egg custard or rice balls to eat alongside it.

## Sweet-and-spicy meat that comes easily off the bone

The main dish I had been waiting for arrived, and the huge bones were piled up like a mountain—visually overwhelming from the start. There was plenty of scallion and sesame on top, while underneath were rice cakes and udon noodles in a red sauce. The moment it landed on the table, its spicy yet slightly sweet aroma spread out and made me want to dig in right away.. A familiar flavor is a dangerous thing. The portion felt even more generous in person than it looked in the photos, so it seemed perfect for a satisfying meal.

The sauce looked like it would be extremely intense, but once I tried it, it was sweet and spicy with lots of savory depth. The meat seemed to have been cooked slowly until tender, so it came easily off the bone. Big pieces of moist meat clung to the bones without being tough, making it fun to pull apart and eat one by one. The sauce had soaked evenly into the meat, and while the flavor was bold, it was not overly salty—just the right amount of kick for either rice or drinks. If you love spicy meat dishes, I think you will really feel the charm of Paldo Ppyeogui Suyeong Main Branch.

## How to eat it with rice balls

I ordered the rice-ball set, which goes wonderfully with spicy meat! It was nutty and tasty on its own, but it was much better topped with meat lightly coated in sauce ♡ The meat-and-rice-ball combination was substantial, making this a good place to come for a proper meal too.

I pulled the tender meat from the bone, placed it over a rice ball, and ate it in one bite. The nutty rice, savory-spicy sauce, and moist meat all came together at once, and I could not stop. When the sauce felt strong, eating it with a rice ball balanced the flavors beautifully.

Paldo Ppyeogui is delicious when you put on the provided disposable gloves, pick it up, and pull the meat off with your hands, but I also want to recommend pulling off the meat like this and pairing it with rice.

## Udon noodles and bread: different combinations to the end

The rich sauce had properly soaked into the udon noodles, making them just as special as the meat. As time passed and the sauce reduced, the flavor became even more concentrated, so they stayed delicious until the last bite. Udon noodles are truly essential ☆

For something a little different, you could put salad inside bread and eat it alongside the dish. The plain bread and crisp, nutty salad were nice on their own, but adding meat pulled from the bone turned it into a spicy pulled-pork sandwich, so it was fun to enjoy it in several combinations! Bread and bone grill are an unexpected pairing, but they worked better than I thought. Being able to eat one menu in so many ways meant I never got tired of it.

Once I filled it generously with meat, it looked substantial just sitting there. The tender meat, crisp salad, and plain bread came together to soften the heat and add more nuttiness. If you visit Paldo Ppyeogui, enjoy the meat's own flavor first, have it with rice balls in the middle, then put it in bread at the end.

Overall, the main dish was generous and there were many things to pair with it, so I left completely full. The sweet-and-spicy sauce, tender meat, chewy rice cakes, and udon noodles all worked together without anything missing. Anyone seeking a special meat menu beyond ordinary samgyeopsal (pork belly) or pork galbi (marinated pork ribs) should be satisfied. If you have dinner plans with friends in Suyeong or want spicy food with a drink, I think Paldo Ppyeogui Suyeong Main Branch is worth visiting. The generous portions and many ways to eat it made it memorable.
