## Where is Bupyeong Yang Gopchang and how much is the gopchang hotpot?

Bupyeong Yang Gopchang is an old-school gopchang (beef tripe) restaurant at 17 Bupyeong 2-gil, Jung-gu, in the yang gopchang alley of Nampo-dong, Busan. It's open daily 11:00 - 01:00 and there's no parking lot.

One of my irreplaceable soul foods,,♥ that's right, gopchang!!!!! There's a whole yang gopchang alley here in Nampo-dong, and especially now that it's starting to cool down a bit, the energy on the street is insane haha.

## Weekday evening at Bupyeong Yang Gopchang: sent to the shop next door

I've been coming to Bupyeong Yang Gopchang for over 10 years, and this time, even though it was a weekday evening, there were no seats, so we got directed to the shop next door ㅠ Maybe it's because the weather's getting nice for outdoor seating? There were so many customers;; and maybe because motsunabe is famous in Japan, there were way more foreign tourists than I remembered.

The two shops are right next to each other haha there's even a third branch one block up.. this Nampo-dong yang gopchang spot must be raking it in ㅠㅠ It used to be mostly ajumma staff, but now it's mostly foreign employees running the place.

## Why skip the salt-grilled offal and order the hotpot straight away

Usually I do the salt-grilled course first and finish with the hotpot, but this time I went straight for the hotpot! I'd been craving it for days. You can order the sari (add-in noodles) later since they only go in once everything else is cooked haha. I noticed they've added bunmoja noodles (glass noodles made from devil's tongue root) to match the current trend.

An apron is a must!! You need one for the grilled course because oil splatters, and for the stone-pan seasoning or the hotpot too, since the bright red sauce splashes everywhere. Careful, careful haha. Grab one for yourselves ahead of time.

### Beer at Bupyeong Yang Gopchang: only Terra and Kelly

First things first, let's cool off with a beer. I usually drink Cass these days, but here it's only Terra and Kelly, just so you know! It's been a while since I had a green-bottle Terra.

## Side dishes at Bupyeong Yang Gopchang, with geotjeori (fresh kimchi) the standout

The banchan (side dishes) at Bupyeong Yang Gopchang are salad, pickled radish with onion soy sauce, geotjeori (fresh kimchi), and siraegi soup (dried radish green soup). I remembered seeing somewhere that steamed egg comes as a free side too, but I guess I misremembered,,haha. You have to order it separately.

Among these, the geotjeori is genuinely delicious, seasoned perfectly, just the right sweet-and-sour balance. It'd probably taste even better with the grilled meat, but it's just as good with the hotpot too!! It's freshly tossed right before serving so it hasn't wilted yet, the kicker is watching it slowly wilt as you eat haha.

## How long the small gopchang hotpot takes to come to a boil

The small gopchang hotpot took a while to arrive, probably because of how busy it was, but even at the small size it came packed with ingredients. And what goes with hotpot if not soju~? I hadn't been drinking soju for a while, but hanging out with my soju-loving friends brought me right back(?) haha. How can hotpot and soju be such a perfect combo.

Just a heads up, you have to boil it yourself at the table,, which can be tough if you're really hungry haha. While we were debating whether to leave it or stir it, a staff member came over and prepped everything for us. I was genuinely starving and had been holding back cravings for days.... the smell is seriously incredible haha.

Kkeuh ㅠㅠㅠㅠㅠㅠ this is insane, the visuals, this Nampo-dong yang gopchang is unmissable, and with the chilly breeze picking up, I was craving this so bad! I'd been singing about wanting this for days. It boils up bubbling away, and it gets even better once it reduces a bit, but...

I couldn't hold back my watering mouth, first bite was straight to the broth! Wow, it's been a while since I came, but it's still just as good..? Took me back to my hard-drinking days(?) haha. The glass noodles were well cooked and soaking up the seasoning, the king oyster mushrooms too.

### Is the small gopchang hotpot enough for two people?

The gopchang hotpot small size is the perfect amount for two, and the heart and large intestine portions were bigger than I expected. Overworked, unfocused in the best way ^__^;; loved the seasoning-soaked glass noodle sari, the large intestine stuffed with fat was great too, and the chewy heart, good good. After craving this for days, eating it finally was pure dopamine!!

## When to add the udon sari, and the new bunmoja noodle sari

One more thing, can't skip the udon noodle sari (2,000 won)!!! The broth can get a bit cloudy and thick, so I'd recommend adding it partway through rather than right away. There's bunmoja noodle sari too, so add whichever suits your taste. Whenever you're craving Nampo-dong-style yang gopchang hotpot, go heal yourself at Bupyeong Yang Gopchang..hahahaha
