The kimchi cuts through any richness the broth might otherwise leave behind, so you never get tired of eating~ If you can't handle spicy food, no worries! The seasoning was already spot-on so I didn't need extra salt~ And the real charm of this place's noodles is that they're self-made! The dough is mixed a day ahead and cold-aged, which makes the noodles incredibly chewy and springy~ There was no floury heaviness at all, and the rich broth soaked deeply into the noodles so every last bite was delicious!
