Living in Busan, there are a few foods I naturally crave as the weather heats up, and milmyeon (cold buckwheat noodles) is definitely one of them every summer.

Cold broth, chewy noodles, and a bit of spicy sauce on top — it really wakes up your appetite even on the hottest days, so I end up seeking it out at least once each season.

This time I had plans in Seomyeon and was looking for somewhere to eat, so I went out for milmyeon after a while. It was Seomyeon Milmyeon (서면밀면) — a place anyone looking for milmyeon near Seomyeon Station has probably heard of, and I'd been curious about it for a while myself.

I visited with my boyfriend and we ordered mul milmyeon, bibim milmyeon, and dumplings. With two of us, we could each order something different and share, plus add dumplings on the side, so we got to compare a bunch of flavors.

When we visited it overlapped with mealtime, so there were quite a few customers. As you'd expect from a well-known milmyeon spot, there can be a wait during peak times.

Milmyeon is a dish more people crave as the weather gets hotter, so it's probably wise to expect some wait during lunch or dinner. That said, turnover is fast so it didn't feel like an overly long wait, and being able to order ahead while waiting was convenient.

I'm used to this kind of kiosk ordering these days, so it actually felt convenient — browse the menu, pick what you want, pay, and go in. Simple process. ## What we ordered for two

We also ordered through the entrance kiosk first. After some deliberation over the menu, we ended up with dumplings, bibim milmyeon, and mul milmyeon.

Coming to a milmyeon place, just mul milmyeon alone felt like not enough, but only bibim milmyeon meant missing out on the cool broth — so we ended up ordering both. If you're visiting with someone else, ordering one mul and one bibim to share seems like a solid approach.

And milmyeon alone felt a bit light, so we added dumplings too. The milmyeon-and-dumpling combo worked better than expected. The dumpling skin in particular was chewy, which stuck with me.

### How was the noodle texture?

With milmyeon, the broth and sauce matter, but noodle texture matters quite a lot too. I prefer noodles with a bit of chew rather than something too soft, and the noodles here were great.

## How to add cold broth to bibim milmyeon

## Mul milmyeon first, then dadaegi

We started with the mul milmyeon. The first thing that comes to mind with milmyeon is that combo of cool broth and chewy noodles, and it really hit the spot on a hot day. Mixing the noodles well into the cold broth and taking a bite, my mouth felt instantly refreshed with that distinct milmyeon flavor.

I usually taste the plain broth first when eating milmyeon. If you add too much sauce right away, it's hard to properly taste the base flavor. So that day too, I had a bite plain first, then asked for a bit of dadaegi to add. The flavor changed noticeably after that.

Personally, the thing I'd most recommend from that day is adding dadaegi. Both mul and bibim milmyeon are fine as is, but adding a little dadaegi made it much tastier for me.

## The highlight of the day: mul-bibim style

What I liked most that day was the bibim milmyeon. It's tasty as a plain bibim milmyeon too, but we asked for cold broth and added it in — and that was really the highlight.

Adding a moderate amount of cold broth to bibim milmyeon makes the sauce blend with the broth into something completely different. It's often called mul-bibim style, and I personally loved this method. Next time I visit, I'll probably order bibim milmyeon and ask for cold broth on the side to make it mul-bibim style. I'll also add a little dadaegi for extra spice. The dumplings were good too, so I'll likely order those again.
