The banchan (side dishes) that arrived first were neatly presented and clean-tasting. The owner said that the side dishes and baek kimchi (white kimchi) are made in-house, using ingredients farmed in Yangyang and buying any needed ingredients at Yangyang Market. I also heard about the grilled-meat menu. They said they use salt-aged fresh pork, and prepare their seasoned galbi by slicing the meat themselves and marinating it. We were also told that they use binchotan charcoal made from coffee trees, but we did not get to try the grilled dishes because of our afternoon plans. ## How was the seasoned meat served with the meat sotbap?
