It has been a while since I found a truly, truly, reaaally delicious, life-changing katsu. Hahahahaha. Honestly, it is also somewhere I kind of want to keep to myself. It is Hets, a fantastic pork cutlet restaurant near Jeonpo Station. It is a three-minute walk from the station, and the entrance is already giving off such cool vibes~~

Luckily, we went for a slightly late lunch and there was no wait. If there is a line, though, you can join it through Catch Table.

## Cool silver-and-black bar seating

With its silver-and-black interior, Hets Jeonpo Branch felt modern and cool all at once. The tables are set up as U-shaped bar seating, too.

The open kitchen meant it was lovely to watch the katsu being fried while we waited. An open kitchen like this? That means they are confident... and they had every reason to be. Even the process of making and bringing out the katsu was full of care.

There are hangers and aprons by the entrance and inside the restaurant.

They were also selling Hets merchandise by the sunny window.

## The Hets katsu menu and how to eat it

Hets, the pork cutlet spot near Jeonpo Station, offers katsu made with Jeju black pork (Tamra black pork and Nanchuk Matdon) and YBD pork (Yorkshire, Berkshire, Duroc), plus set menus, sando sandwiches, and sides.

There is also a small token of appreciation for people who serve the country, including police officers, national merit recipients, military personnel, firefighters, high school seniors taking entrance exams, and pregnant customers. Bring the relevant ID and choose one complimentary item: meat curry, two pieces of boneless karaage, or a drink.

In front of each seat, there is pepper, salad dressing, truffle oil, wasabi, and a water cup.

One fun thing: write down a song you want to hear and they will play it for you, haha.

Rice and miso soup come as standard and are available as unlimited refills. The soup was rich with a pleasantly spicy kick, so it went wonderfully with the katsu.

## Why was the YBD hire katsu number one?

> YBD hire katsu

The YBD hire katsu left me unable to close my mouth the moment it arrived. I have tried hire katsu in so many places, but true to Hets' reputation as a great pork cutlet restaurant near Jeonpo Station, this is number one. Hehe.

It comes with salad, salt, and mustard; add pepper or truffle oil to suit your taste.

![Salad with salt and mustard accompaniments](https://img.superchart.com/images/jeonpo-hirekatsu-hetts-donkkaseu/jeonpo-hirekatsu-hetts-donkkaseu-19-1gtsk-966.webp)

Back to the katsu...
No, just look at this glow...
Isn't it so pretty? Hahahahaha.

It is a low-fat tenderloin cutlet with a soft, moist texture, and I have honestly never had hire katsu this perfect. It is not merely similar to other places—it is on another level.

Above all, the doneness was absolutely perfect!! There was none of that undercooked, squishy feeling. The heat had reached all the way through, so it was properly cooked, yet the lean meat was nothing but juicy tenderness. Needless to say, the pork was incredibly fresh.

It just melts away in your mouth. You do not even need to notice the grain of the meat, haha. The meat aroma was so lovely that there was not even a trace of an off smell. It was hire katsu with the basics nailed down, a high level of finish, and supreme freshness. Two thumbs up!! Not greasy at all, haha.

Everything tasted good, but my husband liked wasabi with truffle oil, while I preferred salt with wasabi.

## The chewy, juicy Jeju black pork rosu katsu

> Jeju black pork rosu katsu

![Jeju black pork rosu katsu](https://img.superchart.com/images/jeonpo-hirekatsu-hetts-donkkaseu/jeonpo-hirekatsu-hetts-donkkaseu-20-1glyf-966.webp)

The Jeju black pork rosu katsu, a loin cut, had great chew and savory depth, with a touch of smoky flavor.

![Chewy Jeju black pork loin katsu](https://img.superchart.com/images/jeonpo-hirekatsu-hetts-donkkaseu/jeonpo-hirekatsu-hetts-donkkaseu-21-1xeam-966.webp)

I have never had rosu katsu this delicious. It was not dry meat at all; the chewy texture and wonderful pork flavor were already overwhelming from the look of it.

![The fat-to-lean ratio of rosu katsu](https://img.superchart.com/images/jeonpo-hirekatsu-hetts-donkkaseu/jeonpo-hirekatsu-hetts-donkkaseu-22-1trtq-966.webp)

What is this fat-to-lean ratio?
Hahaha.

I usually prefer tenderloin because the rosu katsu I had eaten before was dry and lacked savory meat flavor, but this loin katsu was so good that it made me want to try their premium rosu katsu, too.

![Juicy rosu katsu](https://img.superchart.com/images/jeonpo-hirekatsu-hetts-donkkaseu/jeonpo-hirekatsu-hetts-donkkaseu-23-86pds-966.webp)

Compared with rosu katsu elsewhere, it was more tender and the juices burst out even more. What I loved most was that all of Hets' katsu had thin, crisp breading, so I could eat through the whole meal without getting tired of it—it finished clean and light!! :) Hehehehe.

![After-meal candy and stamp](https://img.superchart.com/images/jeonpo-hirekatsu-hetts-donkkaseu/jeonpo-hirekatsu-hetts-donkkaseu-24-od0h8-966.webp)

After a delicious meal, I picked up a candy dessert and a stamp. I love pork cutlets, so I eat them often and seek them out whenever I hear about a good place, but I never expected to find such truly next-level, life-changing pork cutlets in Busan... ^.^ Hehe.

If you are looking for delicious katsu, I recommend Hets Jeonpo Branch near Busan's Jeonpo Station without hesitation. Go twice, go three times~~ You will probably become a regular after just one visit? Haha.
