My pick of the day. It properly balanced out the two heavier dishes. While we were eating the two appetizers, the main dish, the jokbal rosé risotto, arrived. I'd eaten a lot earlier that day and told myself I'd just have a bite or two, but the jokbal was so good I kept going back for more. ### Jokbal rosé risotto (braised pork trotter in rosé sauce) A somewhat unusual dish, isn't it? Usually risotto pairs with shrimp, or maybe bacon. This special jokbal (braised pig's trotter) menu braises the trotter well in seasoning, spicy yet with rich, vivid collagen. The next day she texted to thank me for such a good night's sleep (really).
