It is a large café with quite a lot of seating. There is a second floor and a third floor, too. A foreign visitor was already having soufflé and cake for lunch at the gorgeous window seat, the very best spot. There are all sorts of flavors—fresh mango, mangosteen, matcha tiramisu, crème brûlée, and more~~~ Since it is fig season now, I ordered the fig soufflé piled high with figs. A fresh-fruit cake favorite with toppings that change every season!!!! I have been cutting back on carbs lately, but I still love soufflé cake. The reason soufflé cake puffs up so beautifully is all the egg foam, haha. Whip cold egg whites with sugar and the foam becomes firm, haha. It uses a ton, a ton of eggs!!! A protein dessert!!!!! I have made it at home a few times, and I would say it is nearly 80% egg, haha. That is why there are stacks of eggs in one corner of the café kitchen, too. It is a wonderful spot where you can really feel the phytoncides from Seoul Forest. There are three tables outside, and the outermost one has the best atmosphere. I had soufflé pancakes at this table last time. It is always occupied, so I could never sit here. Coming right at opening means I get to sit in such a pretty spot. ## Fig soufflé topped with fresh fruit and whipped cream The fig soufflé cake is piled high with fresh fruit. Sweet syrup is drizzled over the fruit, too. A warm coffee, of course. Add a hot latte and you have perfect brunch. The latte tasted especially good today. The heart latte art was so pretty that it lifted my mood.
