My husband and I wanted a dinner a bit more special than usual, so while looking for restaurants in Suwon, we ended up at Hado.

Hado offers a seasonal course and a basic course as well as a lunch set and à la carte pasta and steak, so you can pick according to your visit time and taste. We wanted to slowly work through several dishes in order, so we booked the 45,000-won Hado basic course.

Once we were actually there, the open kitchen — raised one step up and lit dramatically — made the whole space look like a small theater stage. Watching the chefs trim ingredients and plate delicately was naturally captivating, and even the waiting time between dishes was fun.

## Where to park at Hado

You can park inside the building, but the aisles are narrow and it's hard to find a spot, so we used the public parking lot right next door instead. It's much more spacious and easier to park in, and the first hour is free. There's an extra charge after that, but it's fairly cheap, so it wasn't a burden even while lingering over a whole course.

If you're driving a bigger car or just find tight parking lots uncomfortable, it's probably better to head straight for the public lot.

## It's best to arrive on time for your reservation

When we visited, it looked like guests who booked the same time slot were seated first, and then the course started for everyone together.

Unlike a regular restaurant where each table's food comes out as soon as they arrive, it felt more like several tables' dishes were prepared in sequence, timed together.

Because the food is prepared in line with each table's course flow, I'd recommend arriving a little earlier than your reservation time.

## We moved from a regular table to a seat facing the kitchen

Inside Hado there are regular tables as well as bar-style seats facing the open kitchen.

We sat at a regular table at first, but the moment we saw the open kitchen across the room, we changed our minds. We wanted to watch the chefs cooking up close, so we asked if we could move to the seats in front of the kitchen, and switched.

The space overall was in a calm black tone with soft lighting, sleek and cozy at once. It wasn't overly formal, so you could enjoy the course comfortably — a good fit for a date in Suwon or an anniversary dinner.

## An open kitchen that looked like a stage

Hado's open kitchen felt a bit different from a typical restaurant kitchen.

Because the kitchen sits one step higher than the seating, you could see the entire space at a glance, not just the counter but the floor too. Add the lighting that illuminated the kitchen, and the whole space genuinely looked like a small theater stage.

There wasn't an actual performance going on, but I found myself naturally drawn to the chefs' delicate hand movements. I could watch every step — trimming ingredients, cooking them in the pan, checking a sauce's consistency, coiling noodles neatly onto a plate, and carefully placing even the smallest garnish.

Watching the chefs so focused on their cooking felt like seeing a scene from Culinary Class Wars up close, and even the wait became entertaining. Being able to see how much process and care go into a single plate, rather than just receiving the finished dish, made the food feel even more precious.

It started with two small tarts, followed by one pasta each, sous vide chicken breast steak, and Earl Grey ice cream. You choose the pasta per person at the time of booking — my husband picked the bisque pasta, and I chose the squid ink oil pasta.

### A savory start: green pea tart

The first thing to arrive was two bite-sized tarts, and we were told to try the green pea tart first.

Inside the crisp tart shell was a smooth green pea purée, topped delicately with peas, tender sprouts, and edible flowers.

The pea's distinctive savoriness and subtle sweetness came through cleanly. Light, not too intense — a perfect starter to gently open up the appetite before the real meal.

### Sweet and refreshing: sweet shrimp apple tart

The sweet shrimp apple tart had a completely different charm from the pea tart.

Sweet, plump shrimp combined with a soft purée and crisp apple gave several textures in a single bite. The apple's freshness lightly balanced the shrimp's sweetness, and with the crunchy tart shell added in, it was a small but memorable appetizer.

Starting with two tarts of such different flavors naturally built anticipation for what was coming next.

### My husband's pick: bisque pasta

My husband chose the bisque pasta.

Bisque is a sauce made by sautéing shrimp shells and innards together to draw out deep umami. The shrimp's rich, savory flavor was evenly soaked into the noodles.

It was creamy and smooth without being too heavy or greasy. The buttery flavor supported the shrimp's umami, so the rich taste carried through to the last bite.

If you like deep seafood flavor with a thick sauce clinging to the noodles, this one should suit you.

### My pick: squid ink oil pasta

I chose the squid ink oil pasta.

Noodles coated in a jet-black squid ink sauce, paired with cuttlefish browned in butter — it caught the eye visually right away.

The squid ink's salty, deep umami came with a subtle spiciness that kept me coming back for more. The cuttlefish alongside wasn't chewy at all — plump and tender, and it paired well with the noodles.

Where the bisque pasta was soft and rich, the squid ink oil pasta was sharper and spicier. The two dishes had such distinct personalities that I was glad we ordered one each and shared.

That said, squid ink pasta can leave a bit of color on your lips or teeth, so if you're on a blind date, check each other before you smile, haha :)

### Moist sous vide chicken breast steak

After the pasta came the sous vide chicken breast steak.

Chicken breast usually brings dry, tough texture to mind, but slow-cooked at low temperature, it was moist and tender all the way through.

Even cutting into it, the grain gave way softly, and eating it, there was almost none of that typical chicken-breast dryness.

The carrot purée served alongside added a subtle sweetness, and the grains on top brought a nutty flavor and satisfying pop of texture.

It was impressive that a familiar cut like chicken breast could become such an impressive main dish depending on cooking method and accompaniments. It was the default option with no extra charge, but it left nothing to be desired.

### Finishing with Earl Grey ice cream

The final dessert was Earl Grey ice cream.

With every soft spoonful, a gentle tea aroma spread through the mouth, and the sweetness wasn't overdone, making it easy to enjoy lightly after the meal.

A sweet, slightly bitter caramel and a crunchy topping added texture so it never felt one-note.

After the pasta and steak, it was a fragrant, palate-cleansing finish.

## Hado was even better for letting us see the process

At Hado, we could watch up close not just the finished dishes but the whole process of a plate coming together. Had we stayed at a regular table, we would have missed the chefs' delicate hand movements and plating — moving to the seats in front of the kitchen let us watch it all in detail.

Watching how the food was prepared while we waited, and then seeing the very plate that had just been made in the kitchen placed in front of us moments later, was genuinely fun. From the tarts to the two pastas, the sous vide chicken breast steak, and the Earl Grey ice cream, each dish had a clear personality, and the course flowed naturally.

If you want a polished course meal in Suwon in a relaxed atmosphere, or you're looking for a slightly different kind of date spot in Haenggung-dong, this place is worth a visit.
