Figuring out what to eat for lunch around Seonbu-dong in Ansan is oddly harder than it should be, just because there are so many options. A casual lunch with a friend is nice, but when you're eating with family or a bigger group, you end up looking for somewhere with a wide menu and easy parking.

This time I'm writing up Todamok, a place known around Seonbu-dong for doing kalguksu (knife-cut noodle soup) and bossam (boiled pork wraps) well together. From broth-based dishes like algon kalguksu and chicken kalguksu to bossam, potato pancake, and dumplings, there's enough range that a group can order a bit of everything and share.

The first thing you notice is the relaxed atmosphere with a slight hanok (traditional Korean house) feel. The wood and traditional-style exterior give it a warm, welcoming look that matches its name, and the neighborhood around it is fairly laid-back, so it almost feels like a little outing just to come eat.

The tables have decent spacing, and beyond the regular seating there's room set up for larger groups, which makes it a good option for a family meal or a get-together.

Personally, I think kimchi really matters when you're eating kalguksu or bossam. A bite of warm kalguksu just isn't the same without a piece of kimchi on top, haha. Bossam gets eaten with kimchi and seasoned sides, while kalguksu is mostly about the broth and noodles, so the flavors on the table never felt one-note.

## How does Todamok's chicken kalguksu taste?

I ordered two things that day.

- 🥣 Chicken kalguksu — knife-cut noodles in a richly simmered chicken broth with tender chicken and chewy noodles
- 🥩 Bossam side — ordered to eat alongside

I figured kalguksu alone might feel a little lacking, so I added a meat dish too, and the combo turned out to be pretty great. Eating noodles in the warm broth and then switching over to bossam every so often made the whole meal feel a lot more filling!

The chicken kalguksu was the dish I was most looking forward to that day. I tried the broth first, and instead of anything sharp, spicy, or salty, what came through was a mild, savory flavor. The chicken broth had a rich depth to it without being heavy, and it filled me up in a warm, comforting way.

For me, the broth is the make-or-break part of kalguksu, and here I liked scooping up noodles and broth together rather than eating the noodles alone. The noodles weren't overcooked or mushy — they kept that signature chewy kalguksu texture, which went well with the broth. There was chicken meat in there too, which made it much more filling than a noodles-only bowl.

And then the bossam I ordered alongside! Taking a bite of pork here and there between bowls of kalguksu worked better than I expected. The pork was on the soft, moist side rather than dry.

Eating the pork with kimchi and the side dishes made it even better than the meat on its own. Bossam has a clean, mild flavor to the meat itself, so alternating it with the chicken kalguksu kept things from feeling repetitive.
