It was one of those days when I was craving something hearty and properly made — real Korean food. Then I came across news that Chung-sil Hoegwan serves fresh seafood mulhoe (cold raw fish soup) and hefty grilled seasoned kodari (dried pollock) as basic side dishes, followed by a course-like finish of freshly steamed sotbap and nurungji. I headed straight there. Walking out afterward, my wife and I both gave it a thumbs-up, saying "this is a real gem that lives up to its name — faithful to the basics." From the neat presentation of every dish to the spotless self-bar, the juicy raw pork belly, and the deep, spicy galbi kimchi stew, it was a feast for all the senses. It occupies a spacious corner unit on the ground floor with a full glass front, and with the surrounding apartment complexes and shopping infrastructure, it's a great spot for family dinners as well as work gatherings for nearby office workers.

Arriving in the evening, the sign lit up the street from far away, sharp and stylish enough to catch my eye. Out front, an air banner in bold letters reading "kimchi jjigae samgyeopsal" made the place instantly recognizable even from a distance.

Peering through the floor-to-ceiling windows, I could already see plenty of guests seated inside, enjoying their meals.

## Inside Chung-sil Hoegwan: seating and whether it works for a family dinner

Stepping through the door, I was struck by the high ceilings and open feel, along with a cleanliness that stood out — no lingering grease smell or smoke haze typical of a barbecue place.

What especially impressed me was the interior, which blends traditional Korean tiled eaves and softly patterned hanji lattice screens with a modern sensibility. The tables were spaced generously apart, so even when the restaurant was full, there was no sense of crowding — a great layout for talking comfortably with your group over a meal.

On one wall hung three framed statements reflecting the firm convictions of the kitchen behind the restaurant — lines like "a table set by a chef who has devoted 30 years of his youth to cooking," along with a pledge to stick to honesty and stubbornly solid fundamentals. It built trust before I'd even tasted a bite.

Crispy on the outside and tender, mild inside, the fish was thoroughly coated in a sweet-spicy, savory house sauce, topped generously with sliced scallion and sesame seeds — visually striking from the first look.

The rest of the side dishes were just as impeccable — crisp, lightly seasoned bean sprouts, salty pickled garlic scapes, crunchy dried radish strips, and a salad with almond slices and purple cabbage in a nutty black sesame dressing, all of which elevated the meal.

Perfect for grilling, there was also aged whole-leaf kimchi, fresh lettuce wraps, onions and enoki mushrooms for grilling, spicy cheongyang peppers, sliced garlic, salt, and ssamjang, all neatly set out.

## Grilling the fresh pork belly and building the best ssam wrap

The main grilling began. Served on a square plate, the raw pork belly had a beautiful balance of pink marbling between meat and fat. You could tell right away it was fresh, not frozen — the texture and sheen were unmistakable.

Once the tongs laid the pork belly on the hot stone griddle, it started sizzling loudly, filling the air with a savory aroma.

Underneath the pork, aged kimchi, onions, and enoki mushrooms were grilled together so they'd soak up the rendering fat naturally. The pork belly turned golden — crispy on the outside, juicy inside.

Popping a well-grilled slice of pork belly along with a piece of the fat-soaked spicy old kimchi into my mouth, the savory richness of the fat and the clean, umami tang of the kimchi burst together beautifully.

It was also great with the tangy-spicy scallion salad, and wrapping fresh lettuce around grilled kimchi, enoki, garlic, and ssamjang for one giant bite was an unforgettable combination. Between bites of meat, a cool sip of mulhoe washed away any greasiness, keeping my chopsticks moving nonstop.

## Galbi kimchi stew, stone-pot rice and the nurungji tea finish

The galbi kimchi stew we had alongside the meat was equally impressive. Bubbling away in an earthenware pot, it was packed with thick tofu, scallions, and whole pieces of aged kimchi — the broth alone was rich.

Digging in with tongs, up came tender, fully braised kimchi along with hefty chunks of meat. The meat had no gamey aftertaste and practically melted in the mouth, while the deep, spicy broth infused with old kimchi made it impossible to put the spoon down.

And then the freshly steamed sotbap sealed the deal. Lifting the wooden lid released a puff of white steam, revealing rice grains glistening with a beautiful sheen. Scooping the rice into a bowl and mixing it with the spicy stew broth and kimchi, a whole bowl disappeared in no time.

After the rice was scooped out, hot water was poured into the pot and covered with the lid. By the end of the meal, it had turned into a milky, nutty nurungji sungnyung.

Scraping up the soft scorched rice stuck to the bottom of the pot with a spoon and eating it warm settled my stomach after all the meat and stew — a truly perfect ending.
