Just like gukbap is Korean soul food, pork noodles (gogi guksu) give off that same comforting vibe in Jeju. I was craving a bowl, so while making my way toward Aewol I stopped by Handam Guksu, a local pork noodle favorite that apparently draws plenty of locals too.

A great hangover-cure meal if you had a drink the night before! The regular portion is already generous, so the large size must be huge. If you like mixing rice into broth, order a separate bowl of rice after finishing the noodles and mix it into the leftover broth.

Curious, I also tried the bibim pork noodles. The bibim version comes with cucumber alongside the bean sprouts, and the meat is shredded into thin pieces — a generous portion overall.

For bibim dishes, the sauce matters most, and this one was a spicy sauce with a hint of fruity sweetness — really tasty.

The bibim noodles use thin noodles like somyeon. There was so much of it that mixing the sauce in took a while, haha.

But pouring in dongchimi (radish water kimchi) broth makes everything moist and much quicker to mix. I first tried mixing with just a little broth, then added enough that the bottom of the bowl got fairly soggy — and it was definitely tastier with more dongchimi. They serve the dongchimi separately, so you can adjust to your taste. It's delicious even just spooned up plain! The portion is generous, so you can pour some over the noodles and still have extra to sip on its own.

## Sliced pork topping vs shredded lean meat: how the two bowls differ

The meat in the bone broth pork noodles has a bit of fat and is sliced thin, giving it a very soft texture, while the meat in the bibim pork noodles is lean, shredded meat that can feel slightly drier — but it actually suited the bibim noodles well.

Above all, I loved how generous the meat portion was! The seasoning wasn't too strong, but it was still craveable. And no dry mouthfeel afterward! Handam Guksu stands out for offering both broth and bibim noodles, plus using bean sprouts in the pork noodles.
