## A BBQ restaurant where staff grill for you

These days, I find myself often visiting places like Hubaldae near Dongdaegu Shinsegae, where staff grill the meat for you instead of grilling it yourself. I'm not great at grilling meat to begin with, and when I focus on grilling, I end up not properly enjoying the meat or the conversation.

Hubaldae, the pork belly spot near Dongdaegu Station, apparently started in Seomyeon, Busan in 2010 and has since grown into a nationwide chain. That made me think it must be a place that's proven its taste and service to a lot of people :)

The basic side dishes included garlic, chili peppers, mushrooms, sundae (Korean blood sausage), two types of sauce, and myeongi namul (wild garlic leaf) wraps.

Interestingly, Hubaldae pursues a unique style where you wrap your meat in honey potato instead of lettuce or perilla leaves. Since it was my first time eating pork belly with potato, I thought this would be a nice specialty too.

On top of that, eating the sweet-and-sour kimchi jjaglee (kimchi stew) together with the pork belly was also a treat. Overall, the fresh combinations I hadn't tasted at other pork belly restaurants felt refreshing at Hubaldae — you could really see the effort put into coming up with various ideas.

The daechang was much plumper than I expected, so I wondered how they'd grill it — but they cut it with scissors themselves to make sure the inside and outside cooked properly.

I thought grilled daechang could easily end up just tasting greasy if done wrong, but eating it with the spicy sauce and chives cut the greasiness right down. My partner, who usually doesn't enjoy daechang, said this place's daechang was different and ate it happily.

Well-aged pork belly speaks for itself. Thanks to the staff grilling it perfectly, all we had to do was enjoy it :)

## How to fully enjoy Hubaldae

Hubaldae, the pork belly spot near Dongdaegu Station, recommends three ways to enjoy the meal deliciously: first, topping kimchi jjaglee with fresh wasabi; second, topping myeongi namul, danggwi (basil-like herb), and fresh wasabi; and third, the unique combination of putting myeongi namul on honey potato, then topping with kimchi jjaglee and fresh wasabi.

Even the basic sauce provided wasn't the usual soybean paste-based ssamjang. You could really tell a lot of effort went into developing their own sauces.

But the most unique part was grilling basil and danggwi to eat alongside the pork belly. Since I actually grow my own basil at home and love its fragrant herbal aroma, the basil + pork belly combination was quite fun for me.

The owner made the first perfectly grilled piece into a pretty wrap for us, which made it even more enjoyable.

## The finishing side dish: signature ramen

After enjoying the pork belly and makchang with sweet honey potato wraps, I found myself craving something spicy to finish.

So we ordered the restaurant's signature ramen to finish the meal. Spicy, with noodles boiled just right to a nice chewy texture — this signature ramen was the perfect way to end the meal :)

Since the area is mostly full of bars, restaurants near Dongdaegu Shinsegae rarely have baby chairs. Hubaldae Dongdaegu Station Branch does have baby chairs, which made it seem like a good option for a family visit.

Friendly service and a distinctive flavor to boot! If you're trying to decide on dinner near Dongdaegu Shinsegae, I think this place is worth a visit :)
