It serves both pork belly and kimchi stew, so it works for dinner or simply for a hearty meal, and apparently it gets busy at lunch too. No hesitation: cauldron kimchi stew for two!!! And an indispensable side dish—what goes with kimchi stew? Rolled. Omelet. Side dishes that go nicely with kimchi stew or meat quickly made the table feel abundant. Before the mains even came out, I was nibbling on this and that—especially the seasoned chives. Seriously, who made that seasoning? The pot came out generously filled with aged kimchi and meat. That distinctive warmth of freshly cooked pot rice made it perfect with the kimchi stew. Snip up the whole piece of aged kimchi, then once it starts bubbling away, have it with rice. There is something fun about letting it simmer right at the table, and as the broth gets deeper and richer, mix that pot rice right into it. Then after scooping out the rice and diligently eating it with the kimchi stew, finish with nurungji (crispy scorched rice).
