I've been feeling pretty run-down lately, so I decided to treat myself with some eel for once. This time I visited Deokeun Jangeo (더큰장어) Main Branch in Buk-gu, Gwangju.

Grilled eel usually feels pricey and I get tired of it after just a few bites, so I don't eat it often — but this place struck me as reasonable both in price and quality. I'd recommend it to anyone hunting for good eel in Gwangju or looking for a good-value eel grill spot.

## How is Deokeun Jangeo laid out? Market downstairs, restaurant upstairs

Unlike a typical restaurant, Deokeun Jangeo Main Branch runs as an eel 'butcher-restaurant' — you pick your raw eel on the first floor and grill it yourself on the second. It's a structure designed to cut out middleman markups and offer high-quality eel at a lower price.

## Where does the antibiotic-free Japonica freshwater eel come from?

Deokeun Jangeo's main strength is the quality of its raw eel. They only use 100% domestic Japonica freshwater eel, certified HACCP by the Ministry of Food and Drug Safety and antibiotic-free by the Ministry of Oceans and Fisheries.

Unlike most places that go through middlemen, they run their own antibiotic-free eel farm in Muan, Jeollanam-do, and ship directly from there. Combining this direct-farming system with the butcher-restaurant model means you get fresh Japonica eel at a lower price than usual. It's a standout choice if you're after freshness and price stability in a Gwangju eel restaurant.

## How to self-grill eel at Deokeun Jangeo in 4 steps

Self-grilling is the default at Deokeun Jangeo Main Branch, but you can call staff over if grilling feels tricky. The tableside kiosk has a detailed grilling guide, so even first-timers can manage without trouble. Here's the method shown in-store.

### Step 1: Grill the back side first

Place the eel skin-side down on the charcoal grill first.

### Step 2: Loosen the eel and season it

About 30 seconds after placing the skin down, lightly lift it so it doesn't stick to the grate.

Then sprinkle a little pink salt on the white flesh now facing up.

### Step 3: Flip and finish cooking

Once the skin side turns golden, flip it over and grill the white flesh for about 2 minutes.

### Step 4: Cut the eel and stand the pieces up

Once the white flesh is cooked, cut it into bite-sized pieces and stand each piece up so the cut edges cook evenly too.

## How did the charcoal-grilled eel taste?

Grilled eel can get tiresome fast if the raw meat is low-quality or too fatty. Deokeun Jangeo's Japonica freshwater eel wasn't overly greasy — it stayed pleasantly savory with a firm texture throughout.
