I was out and about in Ingye-dong, Suwon, and stopped by Jeju Eunhuine Haejangguk near Suwon City Hall Station~

It's really accessible right by the station, and if you're a fan of haejangguk (hangover soup), it's worth a visit at least once haha

## The self-serve kimchi bar and how big the restaurant is

Walking into Jeju Eunhuine Haejangguk Suwon Ingye Branch, the first thing that caught my eye was the self-serve kimchi and other side dishes you can help yourself to freely^^

Here's what the restaurant looks like inside :) It's huge, with plenty of tables, so it'd be great for a group visit too~

Ordering is done via kiosk! Eunhuine Haejangguk is already pretty famous and I knew about it, so I went with the signature menu I'd enjoyed most before — the haejangguk~ haha

As soon as you order, they set the table right away with basic side dishes and black rice hahaha

## Haejangguk with dombe pork and tripe salad: how did the combination work?

When you think of Jeju Eunhuine Haejangguk, the soup obviously comes to mind first, but this time I ordered dombe pork and yangmuchim (tripe salad) along with it hahaha If you're visiting with others, instead of everyone getting their own bowl of haejangguk, I'd recommend ordering some side dishes to share too :) It was so good... Especially since dombe pork and yangmuchim are such different styles, ordering them together made for a pretty great combo :)

### Yangmuchim (tripe salad), tried for the first time

I'd never had yangmuchim before so I was curious what kind of dish it'd be, and it turned out to be a sweet-and-sour tripe salad that whets your appetite for everything else~

Even though it was a completely new dish for me, I ended up loving it :)

There were plenty of vegetables in it, and the tripe was so chewy and delicious^^ The distinctive chewy texture of tripe combined with the tangy, spicy seasoning really woke up my appetite~ If tripe isn't cooked properly its particular smell can be off-putting for some people, but seasoned like this it wasn't overwhelming at all, and the texture was the real highlight lol lol It was tasty lol Chewing on it, there's a crunchy-yet-chewy quality that gives it a charm clearly different from your typical meat salad.

### What exactly is dombe pork?

'Dombe' is Jeju dialect for cutting board, haha (first time I learned that haha). True to the name, it's a Jeju-style dish where boiled pork is sliced into bite-sized pieces and served on a cutting-board-shaped plate. Dombe pork is, well, what can I say — it's basically like a basic boiled pork dish but with the seasoning soaked in deep, giving it a bit of a dongpo pork (Chinese braised pork belly) kind of charm too hahaha

I personally like boiled pork dishes like suyuk or bossam, so I had high expectations, and I was glad there was barely any gamey smell — it was clean and easy to eat without feeling heavy. What I liked most was that the meat wasn't dry at all. The lean parts were clean and tender, and the parts with a bit of fat on them were moist and savory, so I kept reaching for more :)

## The signature haejangguk: what's inside and how the broth tastes

And then the main dish arrived hahaha

It comes bubbling in a stone pot, and the portion is pretty generous haha

There's beef, bean sprouts, ugeoji (dried napa cabbage leaves), and glass noodles all packed in generously, so it's not just a soup that's mostly broth — it really felt like a full proper meal~

The broth was spicy and rich, the kind that naturally makes you want rice haha Adding a bit of minced garlic made the broth even richer, which I personally loved :)

### You can order the haejangguk without blood cubes

Blood cubes normally go into it too, but we asked for them to be left out~ It's worth checking that option when ordering, depending on your preference :)

Mixing rice right into it made it so filling hahaha ><

It went really well with the kkakdugi (radish kimchi) side dish too, and the soup itself was loaded with meat, so it was such a hearty meal :)

## Looking for a bowl of gukbap near Suwon City Hall Station?

If you're near Suwon City Hall Station looking for a good haejangguk spot in Ingye-dong or a hearty bowl of gukbap, I'd recommend Jeju Eunhuine Haejangguk! It's great for curing a hangover, but honestly I think I'll crave it on any day I just want a hot bowl of soup :)
