Three of us visited Uldong Bossam (울동보쌈) near Daegu City Hall. The bossam had a pleasantly tender texture, especially the hangjeongsal, and the potato pancake stood out for its size and crispness. In addition to makgeolli, the restaurant also sells whisky to pair with bossam.

There was no dedicated parking lot for the restaurant. I used the Daegu City Hall parking lot.

The dining room also had plenty of tables, along with a partly separated area. High chairs were available too.

At the time of our visit, the menu included set meals for one, bossam to share, hot pot, and pancakes.

## What came with the medium bossam, and how was the meat?

Ordering the medium bossam filled the table with side dishes and sauces.

We ground sesame seeds and added soy sauce to make a dipping sauce. There was also a red sauce, similar to cho-gochujang, that the restaurant said it made itself. To me, it had a flavor reminiscent of tteokbokki, and it went well with the bossam.

The doenjang stew was savory and packed with meat.

There were various side dishes, pickles, and sauces, so we changed up the combinations as we wrapped or dipped the bossam.

The bossam came with Spanish pork belly and hangjeongsal, or pork jowl.

The hangjeongsal was especially tender. Its texture came through even more when eaten warm, and the musaengchae (shredded radish salad) paired well with the bossam.

The cartilage in the pork belly was soft enough to chew easily.

## Can you order whisky by the glass?

It caught my attention that this bossam restaurant also sold whisky. It was available by both the glass and bottle, with these prices at the time of our visit.

- The Balvenie 12 Year Old DoubleWood: ₩14,000 per glass, ₩250,000 per bottle
- Talisker 10 Year Old: ₩11,000 per glass, ₩190,000 per bottle
- Maker’s Mark: ₩8,000 per glass, ₩130,000 per bottle
- Monkey Shoulder: ₩7,000 per glass, ₩120,000 per bottle

That day, we drank Kooksoondang makgeolli instead of whisky. I was a little disappointed that it was not fresh makgeolli, but the first Kooksoondang makgeolli I tried had a yogurt-like flavor and was enjoyable. I would like to try the bossam-and-whisky combination next time.

## How big was the potato pancake, and how did it taste?

When the potato pancake arrived, a staff member asked whether we liked cheese, then grated a generous amount over it right at the table.

It felt about the size of four of my palms. The potato shreds were thin and fried until crisp, making it feel like eating French fries.

Dipping it in the ketchup served on the side made the French-fry impression even stronger. Since we were eating it with the bossam, the three of us could not finish the pancake and left a little. I would return when I was craving tender bossam and a crisp potato pancake.
