On a rainy weekday afternoon, I walked in assuming it would of course be quiet—then got surprised once by the full tables, and fell for it all over again after eating. This Yaksu Station favorite, Yaksu Chamsutbul Dakgalbi (약수참숯불닭갈비), is the kind of neighborhood gem I want to keep to myself... but shall I casually put it out there?!

I must have some kind of condition where I need to eat out whenever it rains 😑 I was especially craving meat grilled over an open flame that day, so I headed to Yaksu Chamsutbul Dakgalbi, which opens at 2:30 PM. I used the Dasan-dong Public Parking Lot. It’s nice to park and stroll over!

It had barely been open for any time at all, yet every table already had people at it. It was a weekday, it was raining, and it wasn’t even 3 PM. Yet everyone was sitting in front of charcoal grills hahaha. Was this actually a great daytime-drinks spot? We naturally found ourselves a seat too. Make a reservation—this is a real neighborhood favorite.

Inside, large exhaust hoods hang over every table, and ssam vegetables for wrapping, banchan side dishes, and sauces are neatly laid out. There’s even a bubbling pot of doenjang-jjigae (soybean paste stew). The stew is complimentary :)

Rather than dakgalbi stir-fried on an iron plate, this is the style you grill directly over charcoal, so it felt a little different even among Sindang-dong dakgalbi places. (Personally, I love this ㅠㅠ)

## Ordering herbal-marinated dakgalbi and chicken neck meat

We ordered two portions of herbal-marinated charcoal dakgalbi, one portion of salt-and-pepper charcoal chicken neck meat, and homemade fruit bibim makguksu (spicy mixed buckwheat noodles).

The charcoal arrives, and they place the partially grilled dakgalbi on the grate. As the chicken starts sizzling over the glowing red charcoal, the smell gets absolutely wild from this point on 😎 Come with a little food already in your stomach. Otherwise, you’ll eat ten portions.

The chicken neck meat in the middle and the dakgalbi on either side arrive beautifully par-grilled, and they already look delicious from the color alone.

## Herbal-marinated dakgalbi grilled over charcoal

Because the charcoal dakgalbi is marinated, you need to turn it often so it cooks through without burning. Just grill it a little longer over the charcoal as instructed, and when I cooked it until the marinade was lightly caramelized, that smoky fire flavor made it seriously good.

At first, the word “herbal” made me wonder whether it might have a strong, distinctive aroma, but it wasn’t at all overwhelming. The scent doesn’t hit you all at once when you take a bite; it’s subtly infused into the meat, which actually gives it more depth than regular marinated dakgalbi.

It doesn’t leave behind only a sweet, intense marinade flavor either. That light herbal fragrance rising through the charcoal aroma seems to be this place’s special charm. The meat is nicely thick, and still juicy when you bite in. I like it best with the outside pressed into a lightly golden crust. I was glad we ordered the herbal marinade the owner recommended.

## Springy chicken neck meat and bibim makguksu

One bite of the chicken neck meat, and the springy yet chewy texture was spot-on. Why are those slightly crisp edges so delicious hahaha. For this cut, salt is the truth!!! You can really taste the charcoal aroma and the nutty flavor of the chicken neck meat itself.

Dakgalbi’s forever friend: homemade fruit bibim makguksu. A huge bowl comes generously filled with buckwheat noodles, sauce, cucumber, radish, and crushed seaweed. Mix it all up, take a bite, then top it with a piece of beautifully charcoal-grilled dakgalbi—there’s no other heaven like it.

The charcoal dakgalbi, subtly infused with herbal flavor rather than overloaded with it, was even better than I expected that day. Add the springy chicken neck meat and makguksu to finish—what more is there to say!!!! If you want Sindang-dong dakgalbi properly imbued with charcoal aroma instead of the kind stir-fried on an iron plate, remember this Yaksu Station favorite. No need to go all the way to Chuncheon; just come to Yaksu Station. And I had wondered why so many people were grilling meat from 2:30 in the afternoon... then I understood as I ate. This really is the kind of place that makes you want a daytime drink hahaha. Add rain and well... game over!
