It's great that you can order single portions — everything's so good you can't skip any of it. They grilled it fully first, then added the sauce on top. It's not extremely spicy — just the right sweet-and-spicy balance, great as a drinking snack with soju, and just as good eaten with rice like a hormone-jang rice bowl. Even people who can't handle heat well can enjoy this level of spice. ### Galbisal (rib meat) The galbisal portion comes with kkwari-gochu (shishito-style peppers), and the chew on it was outstanding. The subtle meaty aroma was great too. Charcoal grilling isn't easy — especially with fatty daechang and gopchang, and galbisal isn't simple either — but they cooked everything evenly. Nice and plump daechang. There's a smoke extractor installed right above the table, sucking away the charcoal smoke so effectively that your clothes barely smell afterward, haha.
