After finishing my workout I was starting to get hungry, but it was that awkward hour, so I was hunting for a restaurant with no break time when a place suddenly popped into my head: Ramen Truck Sangsu Main Branch (라멘트럭 상수본점). It's a ramen spot I used to go to a lot back in college, so this was a long-overdue return visit. It's been fairly well known as the original Hongdae ramen restaurant for ages, and going back after all this time, it was still packed even at an odd hour haha. The portions are generous and it's great for eating solo, so it's a solid place to drop into when you're around Sangsu and craving ramen.

## What are the outside and inside like?

It's really close once you come out of Exit 4 at Sangsu Station. It's tucked inside an alley, so if it's your first time I'd recommend following a map. Being an old shop, the exterior has a slightly vintage feel, but honestly that vibe suits a ramen place perfectly.

From counter seats to 4-person tables! The interior is built mainly around counter (tachi) seating, so it's the kind of layout where you can come alone, knock out a bowl of ramen and head out haha. Recommended as a solo-dining spot near Sangsu Station!

Of course there are 4-person tables too, and there were quite a few customers who'd come with friends. There were also foreign visitors who looked like they'd wandered over after a day out in Hongdae haha. That's the class of a ramen restaurant sitting between Hongdae and Sangsu~~

It's an open kitchen, so you can catch a glimpse of the food being made, and turnover is quick overall, so even with a crowd it doesn't feel like a long wait. Delivery orders kept coming in nonstop too, wow.

I wanted to go all in on a topping-loaded ramen that day, so I ordered the special ramen haha. On the side I added yaki gyoza (pan-fried dumplings), a mini chashu-don (chashu rice bowl) and a cola. And I threw in the chili topping too, phew.

For reference, it's one dish per person, and they're running a review event too, so keep that in mind if you plan to visit :)

## Special ramen: how are the chashu and broth?

The side dishes are kimchi and danmuji (pickled radish), and the danmuji is yuzu-flavored, so the tanginess was really delicious!! Ta-da, a neatly laid-out ramen spread makes its entrance haha. Right off the bat the visuals are seriously generous... wow.

And what caught my eye most of all was, of course, the chashu.

I mean, do you see the thickness of that chashu...? With slabs this thick on top, it's an instant pass for any meat lover... haha

The special ramen comes with 2 slices of flame-seared pork belly chashu, 4 slices of sous-vide chashu, an egg, 4 sheets of seaweed and more, so it's literally a full-toppings build.

The thick chashu is the real kicker!!! They say the chashu is simmered for hours in a special soy sauce, and it was far more tender than I expected. It's so thick I worried it might be chewy, but there was no toughness at all, it just gave way softly.

The parts seared over high flame especially had this smoky char aroma coming right up, seriously delicious... Having been to plenty of ramen places, some have chashu with a faint porky smell, but here it was clean with none of that, which I loved haha. The thickness is one thing, but with that charred flame flavor added, it goes so well with the ramen!!

I added chili to mine, and while a pork-bone broth can feel a little heavy, the slight spicy kick from the chili cut right through the richness!?? So, recommended! And there was plenty of bean sprouts tucked inside too. Getting that crunchy snap of sprouts here and there while eating made for great texture too.

A broth that's rich but not heavy. The broth is made by blending a 10-hour pork-bone broth with chicken broth, and maybe that's why it had depth yet wasn't as greasy as I expected. It's not the style that's all tonkotsu heaviness; with the chicken broth in there, it goes down clean!

The noodles are house-made, and maybe that's why they didn't go soggy and kept a nicely bumpy, springy texture. They're delicious slurped up with the broth, and even picked out on their own you can really feel the noodle's texture!! Best of all, I didn't feel overly full or uncomfortable afterwards.

I gobbled up the egg before I could even take a photo, so no picture^^^ but personally I thought it was quite tasty haha. It's not the strongly sweet, jangjorim-style flavor; it's soaked in this distinctive savory soy flavor that went really well with the ramen 🥚🍳🥚🍳

### Mini chashu-don and yaki gyoza

Mini chashu-don! It comes topped with ginger, which seemed to keep the chashu's flavor clean. It goes well with the ramen broth too haha, great to pair when ramen alone isn't quite enough. For me it's always a set, haha.

The yaki gyoza look a bit different from your usual fried dumplings. There's a crispy fried-batter-like edge around each dumpling, kind of a semi-Chinese-style feel haha.
