I took my mom and aunts on a trip to Gyeongju, and this restaurant we stopped at for dinner, Hyoeunok, really stuck with me ~ so I wanted to introduce it! Let's head over to Hyoeunok Gyeongju Branch, where you can enjoy amazing minari beef rib hot pot in an elegant, traditional-feeling dining room ^^

The interior had that classic feel of both hanok tradition and modernity ~ and I really loved the greenery outside the window giving the whole place a very Gyeongju atmosphere 👍👍

## Ppyeoberest 5-Set with kalguksu and Jeongseon gondre porridge: an honest review from four adults

We ordered the Ppyeoberest Original 5-Set and added kalguksu (knife-cut noodles), Jeongseon gondre porridge, and glass noodles.

Hyoeunok's signature dish, Ppyeoberest! Beef ribs and bones stacked up like Mount Everest — I guess that's where the name Ppyeoberest (bone + Everest) comes from! The pot itself is deep, so the portion was truly enormous.

With premium beef ribs, woosamgyeop (thin sliced beef brisket), kalguksu noodles, gondre porridge, and extra glass noodles all added on, we had a gorgeous full Korean spread. Even looking back at it now, the Ppyeoberest visual is still amazing!

There were four huge beef ribs in there, and the bones were packed with meat too!

Braised for a long time, the beef rib meat was so tender — dipped in sauce with fragrant minari (water dropwort) and crunchy bean sprouts, it was pure honey in every bite!

### Are the extra glass noodles worth it? Plus woosamgyeop shabu-shabu

What's a hot pot without glass noodles, right?? Usually when you order extra you only get a little, but Hyoeunok gives you a ton, so I was very happy with the amount. The glass noodles, soaked in all that hot pot broth — no words needed, just really good 👍

We also shabu-shabu'd the woosamgyeop that came with it, and the broth kept getting richer and richer.

### Two portions of kalguksu and the gondre porridge

Once all the flavor's boiled out into the broth, it's time to throw in the kalguksu! We ordered extra, so we had two bundles. Kalguksu soaked in all that beef rib hot pot broth, so chewy! And Hyoeunok's kimchi and kkakdugi are delicious too ~ they went so well with the noodles. Honestly could rival a dedicated kalguksu restaurant.

My mom and aunts loved the gondre porridge so much! The gondre (thistle greens) aroma filled the whole table, and it smelled amazing!

The squid jeotgal (salted fermented squid) and pickled chili strips balanced things out whenever it got too rich! Especially those pickled chili strips — spicy and tangy, so good 😋
