I came early on a weekday afternoon, so there were few customers, which made it really pleasant and quiet to take my time. Walking inside, a much more spacious and gorgeous space than I expected opens up in front of you.

It's decorated so tastefully it feels like walking into a contemporary art gallery.

This is the inside of Petrico, styled like a gallery with a warm wood-tone base and stylish accent pieces. The space is built around warm wood tones, with eye-catching design pieces scattered throughout, so my eyes lit up right away. The seats are also spaced generously without feeling cramped, making it a great layout for a private conversation.

Finally, the main dessert I'd been waiting and waiting for — the fruit soufflé pancake — arrived! The moment it hit the table, I gasped because it was so cute and pretty.

Bouncy, fluffy, plump, and wobbling with zero resistance — the soufflé's radiant form looked so soft that you could tell its texture just by looking, without even cutting it. As for the composition, there were two thick pancakes generously topped with fresh seasonal fruit — kiwi, orange, and blueberry.

On top of that came the ultimate sweet finisher: a caramelized, crisp-on-the-outside, tender-on-the-inside brûlée banana. Add the nutty homemade whipped cream and rich maple syrup, and it was truly a perfect plate.

When I actually picked up the knife and cut into the pancake, it was insanely soft. It comes with a cutting knife, and you barely need to apply any pressure — just touch it lightly and it slices right through.

The texture coming through my fork and knife into my fingertips was so fluffy and satisfying that I got the urge to just poke it with my fingers out of curiosity haha. I managed to hold back that curiosity, cut a nice big piece, and put it in my mouth... and it just melted away, gone in an instant!

It was exactly the soft texture I had imagined and felt through my fingertips while cutting it. The fluffy, cloud-like cake enters your mouth and dissolves without a trace, leaving me almost tearing up.

The texture was even softer than what I'd originally pictured in my head. There was barely any of that heavy, floury texture or bread-like presence you'd expect.

Instead, it very intuitively felt like very fresh eggs were the main base. So it strangely gave off a healthy feeling, like it might not even be that bad for a diet haha.

Maybe because the egg flavor came through so wonderfully, I felt the batter itself was much sweeter and nuttier than a regular pancake. Watching myself marvel at this so unusually, it's like I'm someone eating a soufflé pancake for the very first time in my life haha.

The pancake batter itself was already pleasantly sweet, so even though I'm typically the type with a childish sweet tooth who drowns everything in maple syrup, this time just a light drizzle was more than enough! Keep this in mind and adjust your syrup amount accordingly.

And here's the really important point that personally won me over! The fresh, high-quality fruit was great, but it was this homemade whipped cream served alongside it that got me.

The cream wasn't overly sweet — just moderately sweet with the milk's nutty richness bursting through, which was exactly to my taste. Real dairy cream, not plant-based, which I absolutely adore!

I scraped it all up so happily that honestly, deep down, I wanted a whole extra refill of just the cream.

If I, someone who doesn't really know much about coffee professionally, could dare to describe it with a comparison,

it was sort of like a Dunkin-style coffee? Heavy-bodied and rich, it was a specialty coffee that paired perfectly with the sweet soufflé pancake dessert.

If you're driving, feel free to visit without worry. For nearby date spots, it connects easily on foot to the Sangsu-dong café street and the main Hongdae shopping area, making it a great course for enjoying sweet desserts here and then shopping around for a date.

If you're near Hongik University Station or Hapjeong Station looking hard for a truly great soufflé spot and a café with good vibes, I strongly recommend making time to visit Petrico.
