Let me introduce a great spot in Paju if you want to properly enjoy handmade mandu (dumpling) hot pot. Today I went back to Bubyeokjeong Pyeongyang Mandu, a place I keep returning to. It's always delicious and my family loves it every time. It's clean and thoughtful enough that it's also a great Paju Unjeong restaurant to take your parents or grandparents to.

We waited through about 20 teams, but it moved faster than I expected. There aren't a huge number of tables, but the turnover is really quick, so the wait is manageable.

My family always orders the mandu hot pot. You can choose your broth — either clear or spicy.

You boil the vegetables first, then add the mandu in briefly. At the end you add the knife noodles, and here's the key detail: they give you a 5-minute hourglass. Since it's handmade knife noodles, the texture is chewy, and timing it exactly 5 minutes makes it perfectly chewy.

It comes already boiled, so you can eat it right away. It's a spicy broth like yukgaejang (spicy beef soup) with four mandu inside. One order comes with four mandu as standard.

If you go late, they often sell out of the pancake, but this time it was still available, so we ordered it. Since the mandu filling has mung bean added to it, it seems that's what goes into making the pancake too. Maybe that's why it's so crispy. At ₩10,000, it's affordable to add as a side dish.

The family-friendly touches here are really great. There's a self-serve bar with various side dishes and broth. There's also a microwave, so you can warm up baby food. They even have kids' dishware, so there's nothing to worry about bringing a young child.

You can actually watch the mandu being made. It's all done in the open, so seeing it with your own eyes proves it's truly handmade, which made me trust it even more. The restaurant overall was clean and tidy, so we ate happily.
