## In short

Shirokuma is a Japanese sushi restaurant in the Beomeo housing district dining cluster in Mulgeum-eup, Yangsan, Gyeongnam. The writer ordered the 12-piece premium sushi set (22,000 won) and the 10-piece special sushi set (17,000 won), tasting mullet (milchi) sumiso, garlic-topped akami tuna and eggplant sushi, and was impressed that Shirokuma uses unfrozen neta such as large olive flounder and Norwegian salmon with Koshihikari rice for the shari. This is omakase-level quality rather than tray sushi, so Shirokuma is a safe pick for sushi in Yangsan.

Looking for truly delicious sushi in Yangsan? I recently visited Shirokuma, a spot that's been getting nonstop buzz among Yangsan sushi fans lately. Known for fresh seasonal fish and excellent quality, this place delivered — not frozen fish, but high-quality neta and shari from start to finish. A real Yangsan sushi gem.

## Shirokuma's location, parking, and hours

The exterior really caught my eye right away. The clean, atmospheric interior made a great first impression before I even walked in. The restaurant sits in Yangsan's Beomeo residential-district restaurant cluster, so it's easy to find.

![Alley scene near the entrance of Shirokuma](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-02-1qczu-900.webp)

You can park in the alley near the restaurant, but it's narrow, so I'd recommend using the Hwangsan Village public parking lot instead — it's free from 6pm to 9am, making it a convenient option.

## Partitioned booth seating, waiting room, and interior vibe

Walking inside, the first thing I noticed was the spacious, comfortable table area. There are well-set-up reserved booths with partitions for private dining, which really fits the reputation of this Yangsan sushi spot — the interior clearly considers guests' comfort. There's also a separate waiting room where you can wait comfortably for your turn, a nice touch. Overall the space is clean and well divided, making it perfect for family gatherings, work dinners, or just a pleasant lunch.

## Shirokuma's menu and order composition

The ingredients here are the real deal. They don't use frozen neta — they use fresh olive flounder daily and Norwegian superior-grade salmon, plus Koshihikari rice. This is a Yangsan sushi restaurant doing it properly! If I lived nearby I'd probably eat here every day haha.

## Even the basic broth and salad stand out

Before the main meal, broth and salad came out first. Even though it's the standard complimentary broth, one sip revealed unusual depth. Unlike typical miso soup, it had that deep, savory richness of a well-simmered fish stock. The salad was also nicely sweet, perfect for whetting the appetite, and the rich broth already had me excited for the main sushi.

Pickled radish and ginger are also provided.

## The premium 12-piece and special 10-piece sushi sets

Ta-da, here's the sushi I ordered! The neta is thick and the visuals are amazing.

![Shirokuma's 12-piece premium sushi set](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-13-buit0-900.webp)

This is the premium sushi set. Very generous at 12 pieces. The composition differs slightly from the special sushi.

![Shirokuma's 10-piece special sushi set](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-14-oohir-900.webp)

The special sushi set is also excellent. The fish looks so fresh and delicious, doesn't it?😍

![Futomaki packed with ingredients](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-15-1cvzs-900.webp)

### Futomaki

I started with the futomaki (thick rolled sushi), and it was packed with so many ingredients that it was hard to fit in one bite. Fresh fish, crunchy vegetables, and soft egg came together richly in the mouth — each ingredient stayed distinct while blending harmoniously, light yet satisfying.

![Flounder sushi topped with pine needle garnish](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-16-1ujwg-900.webp)

### Flounder and squid

The flounder had what looked like pine needles on top — fragrant, and the flounder itself was well aged, going down super smooth. A really great pairing.

![Squid sushi decorated with perilla leaf](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-17-zn3f0-900.webp)

The squid had perilla leaf as a garnish, and the chewy-yet-tender texture squid is known for really came through. The subtle sweetness that develops as you chew, paired with the fragrant aftertaste of perilla, was very appealing.

![Salmon sushi with score cuts](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-18-4talu-900.webp)

### Salmon

The fattiness of the salmon was amazing! It even had score cuts, and the rich, savory fat melted in my mouth the moment I bit in. The distinctive salmon flavor spread richly without being greasy at all — a great balance of lightness and umami.

![Yellowtail sushi topped with smiso sauce](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-19-1jrg2-900.webp)

### Yellowtail smiso

I also tried the yellowtail smiso — the crisp, chewy texture of the yellowtail paired with the sweet-and-sour, savory smiso sauce made for a special treat. The clean, mild flavor of the fish that comes through as you chew, along with the sauce's umami, cleansed the palate nicely.

![Akami tuna sushi topped with garlic](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-20-1nu9n-900.webp)

### Akami tuna and Koshihikari shari

The tuna's akami cut came topped with garlic, which was also fragrant and delicious! Since the shari is made with Koshihikari rice, the individual grains really felt alive.

![Shirokuma's signature eggplant sushi](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-21-173g7-900.webp)

### Eggplant sushi

This place is also uniquely famous for its eggplant sushi, and after tasting it I immediately understood why. The subtle smoky char, the natural sweetness of the eggplant, and the sweet sauce all came together — so delicious!

![Freshly grilled beef sushi](https://img.superchart.com/images/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso/yangsan-mulgeum-sushi-shirokuma-milchi-sumiso-22-1wvd9-900.webp)

### Beef sushi and egg sushi

The beef didn't taste frozen at all — it was like freshly grilled beef sushi!

Even the egg sushi here isn't made from a pre-made product — you can really taste the handmade care. Mildly sweet, with a soft, fluffy texture, it showed that this sushi restaurant has strong fundamentals. I think this is the best sushi I've had in Yangsan recently. I'll definitely come back next time I'm in Yangsan. Left very full and satisfied. The sushi quality felt less like standard pan-sushi and more like omakase level.

## Final thoughts

From the clean, atmospheric exterior to the comfortable interior, and from the basic broth all the way to the main sushi, nothing here fell short.

From the handmade egg sushi to the rich, fatty salmon, the special yellowtail smiso and the eggplant sushi, the natural flavor of the ingredients and the care put into them really came through.

With partitioned seating and a waiting room designed with guests in mind, it's also great for group gatherings or a tidy lunch.

If you want to enjoy excellent, can't-go-wrong sushi in Yangsan, I highly recommend visiting without hesitation!
