It's open 11:00-24:00 on weekdays (last order 23:00) and 11:00-23:00 on weekends (last order 22:00). ## Inside Marblejeong in Seongsu: space and seating I finally went back to Seongsu for hanwoo after a while at Marblejeong. It came with sirloin, galbisal, and chadolbagi, and the color of the meat was clearly different from the get-go. It arrived neatly arranged on a plate with dense marbling, so I was already excited before it even hit the grill. It's a bit chewier and has more bite than the sirloin, so if you personally like that kind of texture, you'll probably like galbisal too. Grilled golden brown on the pan, the outside was slightly crisp while the inside stayed juicy — great texture. If sirloin feels soft and savory, galbisal is the kind where the meaty flavor gets stronger the more you chew. It was great dipped in salt, and it also paired well with the sides. Since it's thinly sliced, it cooks fast the moment it hits the grill, so the trick is to catch the timing and eat it right away — that's when it's best. Being thin, the texture was soft, and the savory fat spreading in your mouth was great. Especially after eating sirloin and galbisal first, the chadolbagi felt like a whole different kind of charm. If sirloin and galbisal were about really tasting the beef itself, chadolbagi was more about that rich, fatty flavor hitting you. Personally, chadolbagi is delicious on its own, but it was even better eaten together with the sides. ## Honest verdict on Marblejeong Switching between the three cuts meant the texture and flavor changed each time, so it didn't get repetitive the way it might if you just ordered one cut over and over — I was glad I went with the mixed grill.
