This weekend I went to "Don Tamguso" in Magok with my boyfriend. The vibe, the course structure, and the taste were all so satisfying that I think this place is great if you're looking for a restaurant for a special anniversary or a date-course spot near Magok Station! Let me write in detail about everything from the course to the food itself!

Don Tamguso is located about 5 minutes on foot from Exit 3 of Magok Station. It's not far from the subway station so accessibility is great! Also, Magok itself has wide roads and wide sidewalks, everything feels open and spacious, so it's really nice to walk around, and we got there in no time!

## The Don Tamguso dinner course starts with a printed menu card

When you enter Don Tamguso, they seat you and give you a pamphlet listing the order of today's course. I loved being able to see the overall flow and the ingredients going into each dish beforehand! In particular, while actually enjoying the course, being able to check with my boyfriend what ingredient was in each dish let us feel the flavors more deeply.

### Celeriac soup

The soup came out first. The ingredients listed were celeriac, bacon, and fresh cream — it was a deep, savory soup with something like a pine-nut nuttiness combined with a rich fresh-cream feel.

### Fruit salad

Next came a salad with finely diced dried persimmon, orange, apple and more. It was sweet and tangy, and the bubbly-textured sauce on top was memorable — such an interesting texture! The fresh basil mixed in really anchored the whole salad, which made it taste even better to me.

### Flourless shiitake mushroom lasagna

Next up was a flourless lasagna made with white ragu! You know how lasagna normally has wide pasta sheets layered top and bottom!? Here, those pasta sheets are replaced with shiitake mushroom.

I'm not usually a fan of shiitake — even when I order mushroom tendon (tempura on rice), I always swap out the shiitake for something else. I'm someone who doesn't really like that particular shiitake aroma, but this... this was genuinely so good..! (I'm still thinking about the taste right now.) They maximized shiitake's strengths, bringing out a meaty texture while toning down the aroma so it wasn't overwhelming! It went really well with the overall flavor of the ragu sauce!

## Main 1: koji-aged pork tenderloin

The first main dish was grilled tenderloin! It came with koji-aged tenderloin, marinated sun-dried tomato, and sauerkraut, the German-style pickled cabbage!

The tenderloin was so tender it was hard to believe it was pork! It really melts in your mouth — that's what people mean when they say that! The broccoli and button mushrooms served as garnish were both cooked perfectly too. The more courses I went through, the more I felt that Don Tamguso really brings out every single ingredient as if it were the star.

Don Tamguso's restaurant introduction says, "We are Don Tamguso, exploring how to eat pork deliciously." I could really feel that thought behind every ingredient — how to make it delicious, how to bring out its natural flavor, and how the overall sauce and ingredients harmonize. Eating through the course dish by dish, it was truly delicious!

## Main 2: house-made bacon with minari and cumin

The second main was house-made bacon and minari (water dropwort). I heard this dish has a South American touch, and the sauce did feel distinctive because of it! Minari has such a distinctive aroma, right!? Mixed with spices like cumin and fennel, it had a suddenly exotic feel to it. And yet it was so harmonious. As someone who loves minari, the aroma and flavor were the best. They really know how to use ingredients well!

## Jambon burger or abalone-innard barley risotto: which to pick?

For the last dish before dessert, you get to choose one of two options. My boyfriend and I each picked a different one so we could try both — one was a burger with jambon in it, and the other was risotto made with Wando abalone innards.

The burger had jambon, sauce, arugula, and carrot rapée inside. The carrot rapée had a slightly tangy edge, so even as a burger it didn't feel heavy — it felt fresh! It was like eating a burger in a completely different way! My boyfriend said he was surprised jambon could be used like this.

The risotto used barley instead of regular rice, so the distinctive springy texture of barley went really well with the creamy risotto flavor. And the fried bangpungnamul (glehnia root herb) on top was the kicker... The cream and the fried herb created a combination of softness and crunch that made every bite enjoyable! I preferred the risotto and my boyfriend preferred the burger, so if two people go, ordering one of each to share seems like a great idea!

## Dessert to finish: milk pudding

The final dessert was a milk pudding topped with a sauce made by reducing blueberries and cranberries. As the blueberry sauce mixed with the milk pudding, you know that famous pudding people talk about eating in Japan? It really had that vibe! It was a delicious pudding with a standout softness and a milky aroma!

## Is Don Tamguso a good date restaurant in Magok?

Since Don Tamguso is a restaurant where you sit side by side at the open kitchen and eat course-style, I felt it was a great place to visit for a date or a special anniversary. I'd really recommend it to anyone who wants to enjoy pork dishes that aren't your everyday fare, or anyone looking to try something different. Now I'm really curious to try their lunch next time!
