I'd wanted to try Namak's Ubokgeum Saenggalbi for ages, so I finally went! We had fresh ribs, seasoned ribs, and dessert too — and the fresh ribs were even better than I expected, making this a place I want to go back to. Here's my detailed review of Ubokgeum Saenggalbi Namak branch, the fresh rib spot in Namak, haha.

As soon as we sat down, they set up the basic side dishes! There was also steamed egg, though it came out a bit late~

When I think 'galbi,' I usually only think of the seasoned kind, but at Ubokgeum the fresh (unseasoned) ribs are the signature, so I ordered them for the first time. The moment I saw the meat, I let out a gasp — bright red color, firm texture... ugh, I couldn't wait to eat it.

Hurry up and give it to me... once it's cooked just right, they set it aside like this. You can just tell it's tender and full of juice...

Time to try the fresh ribs, grilled to perfection by the staff!!!! Since there's no sauce, you can taste the meat itself so much more clearly~ The outside was golden and crisp from the charcoal!! The inside stayed juicy and moist. I had no idea fresh ribs could be this good...

The ratio of lean meat to fat was just right, so the more I chewed, the more savory it tasted. At first I tried it with myeongi namul (wild garlic leaf) and wasabi, but the meat itself was so good that I ended up just dipping it lightly in salt. Delicious even with no sauce at all! It was the most memorable dish of the day, haha...

At first they just left the rib bones on the grill... and honestly, picking the meat off the bone at the end is delicious too. So I was planning to do that, but they came back and separated it for us... a true bone-separating master. The meat near the bone was chewy and so good—

My friend went all in and ordered the cheonggukjang doenjang stew too... if you need soup with your meal, order the cheonggukjang stew or the crab jjiglae stew!

Refreshing ourselves with cola. Gotta save room, since the seasoned ribs are coming next...

## How does the marinated beef rib half plate taste?

We ordered a half plate of seasoned beef ribs (₩29,000) as an add-on, haha. It's less visually striking than the fresh ribs, but it looked like it'd be tasty!

Being a half plate, it seemed to cook faster (?) And being a half plate, we polished it off even faster...

The seasoning wasn't the thick, strong LA galbi type — it was light and mild. Not overly sweet or intense, and it grew on me more with every bite. Even after all the fresh ribs, it was a completely different flavor, so the half plate disappeared in no time, haha.

## Dessert at Ubokgeum Saenggalbi: kimchi-mari guksu and jjagyechi

Gotta have dessert too. Two of us basically filming a mukbang here... the kimchi noodles (kimchimari guksu) aren't hot noodles — they're cold, tangy, and sweet-sour. After eating quite a lot of meat, it's the perfect way to wrap things up.

Jjagyechi. Give me the pa-kimchi too... jjapaghetti is always right, and with egg and cheese added, there's no way it could be bad.

A poster on the wall said their fresh ribs are ranked number one in Jeollanam-do, lol. But honestly, the fresh ribs really are the flavor that keeps coming back to mind. Most memorable of the whole meal.

## Fresh ribs or marinated ribs — which is the top pick?

I tried both the fresh and seasoned ribs at Ubokgeum Saenggalbi. The fresh ribs had that melt-in-your-mouth savory flavor of the meat itself! The seasoned ribs had a mild, understated sauce that wasn't too sweet or sharp — also appealing. Both were delicious, but my pick is definitely the fresh beef ribs, haha.

Looking at the menu, I saw they have fresh pork ribs too, but if I come back, I think I'd probably order the fresh beef ribs again. That's how impressive they were this time...! It was a satisfying visit to Ubokgeum Saenggalbi in Namak, from great meat to a solid dessert finish. Recommended if you're looking for a fresh rib restaurant in Namak.
