Hi, this is Sinni ·˚ I'm a self-proclaimed kalguksu (hand-cut noodle soup) fiend, but eating noodles always left me bloated, so I was sad I couldn't have it often?? But after 3-something years of life, I finally found the answer!! (Not eating it was never on the table ^^) I rushed over first thing in the morning for a hearty, generous meal, and my husband and I walked out clapping a million times — let me introduce 'Sinseon Myeonga'!

Walk about 6 minutes from Yeonsan Station Exit 14 and you'll hit a restaurant street — just look for the white sign! I went at 10am so luckily there was no wait, but apparently at lunchtime it gets crowded enough that you'll need to wait 0_0 How did I only just find out about this place,,ㅠㅠ

The first thing I noticed walking in was how clean it was. All the seats were neatly arranged, and seeing the open kitchen made me think, this place really takes cleanliness seriously. They're clearly proud of their noodles and rice — it's written right there on the wall.

I sat down, had a sip of water, and the sample sundae came out right away!! I was really hungry, and this sundae patted my stomach while I waited. As a chewy-sundae fan, this was ab-solutely the best appetizer for me ㅠㅠ Freshly sliced and still warm, dipped in a little salt — so chewy it made my appetite spike all over again. Owner's idea is amazing,,love it)

All the dishes we ordered arrived at once! It looked like a royal banquet table, my jaw actually dropped. The plates and bowls matched the food so well, and it felt like being treated as an honored guest with such a generous spread ੈ✩‧₊˚ You can tell the owner never does anything halfway.

Even the small bossam (serves 2) is a huge portion, right? The bossam pork comes with pickled radish strips and assorted vegetables. Everyone,, if you're thinking 'how good could bossam be at a kalguksu place?' — you're in for a shock!! One bite in and I thought, whoa,, this is a bossam specialty restaurant,,. Fair warning: the meat just,, melts away,,, Even people with sensitive teeth should have no trouble.

You get ssamjang and garlic sauce for dipping. There was a garlic sauce at another bossam place once that screamed 'I AM GARLIC!!!' at me, sharp and spicy, so I swore off garlic sauce forever.. But Sinseon Myeonga's garlic sauce is on a different level.. First and most important — does it leave garlic breath after? Absolutely not. There's no spice at all, but the gentle garlic aroma with a sweep of sweetness is genuinely pleasant and addictive!! It's all made in-house at Sinseon Myeonga, so you have to try it.

So we entered an infinite wrap-eating loop ㅋㅋㅋㅋ Pretty impressive eating, right? The fat-to-meat ratio was perfect,, one piece of bossam loaded with garlic sauce, garlic, chili, pickled radish,,, it's insane, insane... it just melts away. My husband and I kept giving each other thumbs up the whole time ㅋㅋ

Owner,, please tell me your secret for boiling the meat,,, And garlic — it's delicious, but usually the smell lingers in your gut all day, right? Here, none of that heat and zero garlic breath, huge plus. It feels like they care about even the small details like this, so I have another reason to become a regular ˚୨୧⋆｡˚ ⋆

## Anchovy kalguksu, 7,000 won: fresh noodles that sit easy

This is the dish that turned my husband's eyes upside down. I've had countless bowls of kalguksu, but I don't think I've ever gasped like this before; the noodles had that pale yellow, glossy look typical of fresh noodles. And just from the smell of the broth, I knew this place knew what it was doing!! A deep, rich anchovy broth smell, but not overpowering?

I'm also a dadaegi (spicy chili paste) lover, so honestly, right after taking this photo, I added another scoop (twice total ^^)

Ah,, this deep broth flavor I can't fully put into words,, this soul food only Koreans really get,,, Usually with kalguksu, the first sip is great but it gets watery(?) and you start to tire of it toward the end. But Sinseon Myeonga's anchovy kalguksu broth is deep and rich but also clean! and refreshing!, so it never gets old no matter how much you eat. It's never salty or harsh, so even after finishing the whole bowl of broth my stomach felt fine and I wasn't thirsty.

Can you see how firm and chewy these noodles are~ Because the owner kneads and rolls the dough by hand every day, they feel healthier somehow, and there's none of that typical raw-flour smell you get from kalguksu noodles. Thanks to a hardworking owner, this kalguksu fiend is happy again.

There's kimchi at the self-serve corner, so eat it with the kalguksu ★ I regretted not ordering a double portion,, truly a Yeonsan-dong kalguksu favorite that just keeps you hooked ㅠㅠ My husband and I don't handle wheat well, and eating noodles usually sends us to the bathroom,,ㅠ often. The solution I mentioned at the start was exactly this — 'fresh noodles.' Muhaha. I ate my fill of noodles and felt absolutely fine, my stomach totally comfortable — it felt strange, but I was truly happy!!!!!!

## Octopus bibimbap, 10,000 won, packed with crisp vegetables

The octopus bibimbap comes with the rice bowl and the octopus seasoning served separately! The bibimbap has carrots, bean sprouts, seaweed, chives, lettuce and egg. As someone who doesn't like mushrooms,, I really appreciate this lineup ㅎ_ㅎ

You just pour the whole thing over and mix it well! What's great about Sinseon Myeonga is that nothing is overdone or harsh. When you get octopus bowls or stir-fries elsewhere, sometimes that strong, artificial smoky flavor or chili-oil smell hits you right in the nose, but here it's got just enough of that stir-fried-octopus feel without being spicy, which I liked even more. Perfect for anyone who can't handle spice or wants something less intense!!

The octopus was plump and tender, going down easily. The blended rice, too, felt just right — not too sticky, not too dry, with a nice chewiness and nuttiness! I don't know how they thought to mix the strengths of different rice varieties together like this,, ㅠㅠ amazing, amazing.

I have no idea how much I ate. Even after finishing such a huge portion, digestion was quick and easy, so I'd love to stop by every morning,, like a set breakfast.

The owner's sense of hospitality is insane. After such a filling meal, you'd want something to cleanse the palate, right? I thought it'd be a yogurt drink at most, but sikhye! And yakgwa to go with it!!!!!! Felt like a full-course treat, fitting for a Yeonsan-dong Korean food favorite ｡ﾟ･（>﹏<）･ﾟ｡ I spent the whole way home just singing Sinseon Myeonga's praises ㅋㅋㅋ I think I'll be back again soon ^_^
