Bibimbap (mixed rice bowl) is one of those dishes that can feel like the biggest letdown when you order it out — there's this bias that it's something you could just as easily make at home. But what you can't replicate at home isn't the ingredients, it's the rice. Bibisam Gwacheon Main Branch, which I found while hunting for Gwacheon restaurants, puts that rice front and center. I stopped in for Sunday lunch near Gwacheon Government Complex Station.

## Where Bibisam Gwacheon Main Branch is, and what the room feels like

Bibisam Gwacheon Main Branch is a little over a 3-minute walk from Exit 11 of Gwacheon Government Complex Station, on the first floor of Taeyang Building right behind Gwacheon Fire Station. Before the sign itself, what catches your eye is the phrase posted by the door: "torim bibimbap specialist." That's a fairly specific way for a bibimbap restaurant to describe itself.

At half past noon on a Sunday, almost every seat was taken. It's a mix of two-tops and four-tops, and plenty of solo diners too. The notice stuck on the tablet explains the operating style up front: the restaurant runs on a smaller staff, so pickup and bussing are on customers, and the savings go back into domestic ingredients and pricing. The last line, set apart on its own: "Bibisam's yukhoe (beef tartare) does not use meat tenderizer."

## Bibisam menu and ordering: 31,000 won for two

At Bibisam Gwacheon Main Branch, ordering and payment both happen through the table tablet. Namul bibimbap starts at ₩9,000, bulgogi is ₩10,000, Hanwoo yukhoe and octopus are ₩11,000 each, stone-pot roe rice is ₩10,000, and stone-pot octopus roe rice is ₩12,000. Sets that add griddled tteokgalbi (grilled rice cake and meat patty) and a fried egg start at ₩12,500. Tteokgalbi is Handon (pork) by default; switching to Hanwoo (beef) adds ₩1,000.

We went with the Hongdeung-style torim Hanwoo yukhoe bibimbap set upgraded to Hanwoo tteokgalbi for ₩15,500, and the stone-pot roe rice set with Handon tteokgalbi for ₩13,500. With drinks, the two of us paid ₩31,000 total. Given current Gwacheon lunch prices, there was no need to double-check the math.

The self-serve bar is tucked into one side of the restaurant. Above the drink fridge sit a miso soup dispenser and a container of enoki mushrooms side by side.

Scoop as much enoki as you want into a small bowl, pour the broth over, and that's it. The seasoning is mild, good for cleansing your palate between bites of bibimbap.

Aprons are also stacked individually at the self-serve bar. White kimchi, sesame oil, gim garu (seaweed flakes), even floss and mouthwash are all in the same spot, so it's better to grab everything in one trip — go back and forth twice and your rice goes cold.

## What does Bibisam's Hwangdeung-style torim Hanwoo yukhoe bibimbap taste like?

For the Hongdeung-style torim Hanwoo yukhoe bibimbap, you pick it up yourself at the counter once your order number appears. The tray holds the rice bowl, a griddle plate of tteokgalbi, and an instruction card. The yukhoe (beef tartare) comes in its own small dish rather than piled on top of the bibimbap.

The card says to eat the yukhoe one piece at a time instead of mixing it in — I just dumped it all in anyway. Underneath the rice are bean sprouts, bracken fern, julienned radish, mushrooms and egg strips. The rice itself is already reddish from the start, so there's no need to go hunting for gochujang.

Torim is a technique of repeatedly pouring hot broth over rice and draining it off to adjust the temperature and seasoning. In other words, this restaurant's rice has already settled the question before it even reaches the bowl. Following the instruction to mix with chopsticks instead of a spoon, the namul (seasoned vegetables) stayed intact and the rice grains stayed distinct. The seasoning leans toward low-sodium and isn't spicy.

The tteokgalbi that comes with the set is served on a small cast-iron griddle drizzled with sauce and topped with a soft fried egg. Break the yolk and stir it into the bibimbap, and the red seasoning mellows out a notch.

Ordering one Hanwoo and one Handon tteokgalbi side by side, the difference in thickness and grill texture was obvious. Same sauce, so the difference in flavor comes down to bite and juiciness. Whether the ₩1,000 gap is worth it is a matter of taste.

## Bibisam's stone-pot roe rice and the self-serve miso soup finish

The stone-pot roe rice comes with a mound of flying fish roe in the center, ringed with minced beef, pickled radish, imitation crab, julienned perilla leaf, enoki mushrooms and cabbage. There's a separate octopus version — this is the plain one.

Once mixed, the perilla leaf aroma hits first. The popping texture of the flying fish roe keeps turning up between grains of rice, and since it's a stone pot, it stays hot until the end. The crispy rice at the bottom is meant to be scraped up last.

You're told to add gim garu (seaweed flakes) to taste. The difference before and after adding it is bigger than expected — discover it too late and it's a bit of a shame.

There's a placemat on the table printed with the eating order: mix with chopsticks, eat the yukhoe one piece at a time, sesame oil is already mixed in, add gim garu as you like. I read it and only followed half.

After bussing our own table, we were handed a Chuseok (Korean harvest festival) event scratch card. You scratch off the foil to check.

Bibisam Gwacheon Main Branch wins on rice alone. The torim rice is already seasoned, so there's no need to build flavor with gochujang, and that lets whatever's on top — namul or yukhoe — keep its own character. If you're not used to the self-serve system, the first few minutes can feel a bit chaotic, but in exchange a set runs around ₩15,000. Whether you're after a spot for a solo lunch near Gwacheon Government Complex Station, or need a Gwacheon restaurant on the way to the National Museum of Modern and Contemporary Art or Seoul Grand Park, this is a solid choice. Next time I'll try the octopus.
