On a weekend lunch, I was craving sushi that was clean and still had that fresh, lively bite, so after searching for good sushi spots in Yangsan I ended up at Shirokuma in Mulgeum. I usually care not just about how fresh the fish is but also about the state of the rice in the sushi, so I wanted to visit a proper sushi restaurant.

Shirokuma, a well-known sushi spot in Yangsan, reportedly uses only fresh olive flounder every day along with Norwegian superior-grade raw salmon, and cooks its rice with koshihikari rice so the grains come out plump yet soft. With all that in mind, I headed over with high expectations.

## Where Shirokuma is, plus parking and the wait

Shirokuma is on the 1st floor at 11-5 Hwahap 4-gil, Mulgeum-eup, Yangsan-si, Gyeongsangnam-do, South Korea, inside the Beomeo residential complex right in front of Yangsan Busan University Hospital. It's open 11:30–21:00 and closed every Sunday.

Located in Mulgeum, Yangsan, right inside the Beomeo complex in front of Yangsan Busan University Hospital, Shirokuma is easy to find and get to. If you're driving, the Hwasan Village public parking lot right near the restaurant is very convenient.

Being a popular Yangsan sushi spot, there's a wait. Booking a waitlist spot ahead of time through Catch Table makes the wait much easier.

## What weekend lunch peak looks like inside Shirokuma

Walking in, the place was already packed with diners since it was peak lunchtime. With so many people around I couldn't photograph every corner in detail, but the waiting area was spacious enough that I never felt cramped while waiting my turn. The dining space overall was clean and comfortable too, with tables spaced widely apart so I could focus on my meal without being bothered by chatter from neighboring tables.

There was a receipt review event set up in one corner of the restaurant for after you finish eating. It was run as a little draw, which added some fun and anticipation beyond just leaving a review. Near the exit, there were even candies neatly laid out to freshen your mouth on the way out — a nice touch of consideration right to the very end.

Looking through the menu slowly, the lineup was quite varied. From assorted set menus to individual sushi pieces you can pick to your taste, rolls, and a range of side dishes — it was all well put together. What stood out was how the range of choices seemed designed to satisfy everyone, from first-timers trying sushi to people with a strong preference for a specific fish.

On one side of the table, pickled radish (rakkyo) and pickled ginger — nice side dishes to go with sushi — along with fragrant soy sauce were neatly set out. They were kept in tidy containers so you could serve yourself as much as you liked onto your plate, which was handy to use throughout the meal.

After we ordered, the first things to arrive were a basic salad with a light, refreshing dressing and a warm miso-style soup. The salad was crisp and bright enough to whet the appetite, and the soup had a savory, deep flavor that was just right for settling the palate before the meal.

What we ordered that day was two of the signature Shirokuma Special sushi sets (10 pieces each) and a kids' pork cutlet set for our child. As luck would have it, we visited during the lunch special window, so we also got free udon and soba noodles on top of that. With such a generous spread and good value for money, it felt like a satisfying choice, exactly what you'd expect from a top sushi spot in Yangsan.

### What comes in the Shirokuma Special sushi 10p

The Shirokuma Special sushi 10p caught the eye with its generous lineup. Starting with 3 pieces of aged sashimi with a lively chewy texture, it was filled out with a perfect balance: soft raw salmon, mild tuna belly, sweet-and-salty soy shrimp, chewy squid, soft egg, eggplant topped with a special sauce, and deeply flavorful beef sushi.

What satisfied me most when I took a bite was the harmony of rice and sashimi. Made with koshihikari rice, each grain stayed plump and alive while still breaking apart softly in the mouth. The freshness of the daily-managed olive flounder and raw salmon exceeded expectations, and the umami and distinctive texture of the aged sashimi were outstanding. The lightly smoky eggplant sushi and the savory beef sushi, both paired with sauce that wasn't overdone, each offered something a little different to enjoy bite by bite. You could taste the genuine care put into every single piece.

The kids' pork cutlet set we ordered for our child came out served in adorable dinosaur-shaped dishware. Thanks to the cute look that instantly grabbed kids' attention, our child enjoyed mealtime even more.

The kids' pork cutlet set was a full combo: crispy-fried pork cutlet, savory soft potato croquette, crunchy fried shrimp, and easy-to-eat fried tofu sushi and egg sushi for kids. The cutlet kept a good texture, crispy outside and juicy inside, and the croquette and fried items were light rather than greasy. The seasoning wasn't too strong, so I could feed it to my child without worry, and the plate came back completely empty.

### The free soba and udon that came with lunch

My husband picked the soba noodles as our lunch special perk, and the cold, clean broth was excellent. The savory umami and deep aroma of the tsuyu dipping sauce soaked well into the noodles, doing a great job of refreshing the palate after richer, heavier dishes.

The udon I picked had a warm, deep broth with noodles that stayed springy. The noodles didn't get soggy and kept their chewy bite the whole way through, so I enjoyed it to the very last strand. Even though it was a free lunch-special item, there was nothing lacking in either quantity or quality.

## Is Shirokuma in Yangsan worth a return visit?

This was a satisfying lunch at Shirokuma, a Yangsan sushi spot where you can clearly feel the meticulous care put into everything from choosing fresh ingredients to the process of cooking the rice. With the fine-tuned balance between sashimi and rice, the spacious, comfortable dining environment, and the thoughtful kids' menu, it's a solid choice for a family meal or a date spot. Whenever I'm craving proper, heartfelt sushi, I think I'll be back without hesitation.
