## A plate of beef ribs in Seosin-dong, Jeonju

I wanted some good beef in Seosin-dong, Jeonju, so I visited Ubookgeum Saenggalbi Seosin Branch. This time, I ordered a plate of Ubookgeum fresh beef ribs and kimchi noodle soup as a side. There is always something fun about grilling meat yourself and enjoying its juices and flavor, and the fresh beef ribs went really well with the cool kimchi noodles. Let me introduce the meat and side dishes in detail.

You can use the underground parking lot. You can also park on side streets that are not in a parking-enforcement zone.

## A clean, comfortable restaurant atmosphere

When I walked in, the restaurant felt clean and comfortable overall. It had the lively energy you would expect from a barbecue place, but the tables were neatly arranged, so it was easy to settle in for a meal.

It also looked like a nice place for a relaxed meal with family or friends. The grilling space was set up comfortably too, and I could eat without any major inconvenience.

They also had chilled maesil-cha (plum tea) and sujeonggwa (cinnamon-ginger punch) ready for after the meal, along with fabric softener.

When ordering, you can take part in a receipt review and receive alcohol, mul naengmyeon (cold buckwheat noodles), bibim naengmyeon (spicy mixed cold noodles), or bean sprout ttukbaegi, so I thought it would be worth joining in.

## A menu from grilled meat to lunch specials

At Ubookgeum Saenggalbi Seosin Branch, there were not only meat dishes but also a variety of lunch specials: siraegi-guk (dried radish greens soup), yukgaejang set meals, galbitang (beef short-rib soup), yukhoe bibimbap (raw beef mixed rice), and seolleongtang (ox-bone soup).

First, the meat menu included a plate of Ubookgeum fresh beef ribs, Ubookgeum marinated beef ribs, fresh pork ribs, and marinated pork ribs.

The lunch specials included a siraegi-guk set with bossam (boiled pork wraps), yukgaejang set, galbitang set, yukhoe bibimbap set, and seolleongtang set.

They were also available à la carte rather than only as set meals.

For finishing dishes, there were Ubookgeum spicy blue crab stew, Korean beef yukhoe bibimbap, Korean beef yukhoe bibim naengmyeon, kimchi noodle soup, mul naengmyeon, and bean sprout hangover-soup ttukbaegi. Next time, I want to try the Ubookgeum spicy blue crab stew. I usually love steamed blue crab, and this looked like a good-value option, so I recommend it.

There were also add-on steamed egg and jjagechi, a combination of jajang sauce, egg, and cheese.

After I ordered, the banchan (Korean side dishes) arrived. The seasoned bean sprouts, lightly blanched and dressed in their special sauce, were so good. They had just the right amount of spice and went nicely with the meat, as did the myeongi-namul (pickled wild garlic leaves).

There was also cool white kimchi and seriously tasty green-onion kimchi.

Pickled onions, chilled dongchimi (radish-water kimchi) with slushy ice, and wraps came out too.

There was also warm doenjang-jjigae (soybean-paste stew), great with drinks, and steamed egg.

## Ubookgeum fresh beef ribs cooked just right

Then the long-awaited plate of Ubookgeum fresh beef ribs arrived.

Once the meat went onto the grill and cooked to a golden brown, its distinctive flavor really came through. The table was completely full.

Rather than grilling it for too long, eating it right away when it was cooked just enough made the juices and tender texture stand out even more.

They cut the meat for us when it was not overcooked and the juices were still sizzling nicely.

They grilled it for us, so I could eat comfortably—and, as expected, beef is best fresh off the grill......

It was good for enjoying the flavor of the meat itself, and it paired well with rice too. I think the best way to enjoy it is to grill each piece and eat it straight away while it is warm.

## Kimchi noodle soup that cut through the richness

I also ordered kimchi noodle soup as a side with the meat. When you keep eating meat, your mouth can start to feel a little rich, but the cool kimchi noodles cleared that up nicely. The tangy, refreshing broth and noodles paired well with the meat, making this a great side to have in between bites.

Personally, I like having something cool such as naengmyeon or noodles when I eat meat, and I was happy with how well this kimchi noodle soup went with the beef.

The rib meat was also grilled separately, making for a delicious meal.

As I ate, I noticed that there was hardly any smoke despite the charcoal. Looking closely, the ventilation hood surrounded the grill, so no smoke came out into the dining area and I could eat comfortably.

This time at Ubookgeum Saenggalbi Seosin Branch, I had a plate of Ubookgeum fresh beef ribs with kimchi noodle soup, and the main-and-side pairing was excellent. The fresh beef ribs let me enjoy the meat’s natural flavor while they grilled it for me, while the kimchi noodle soup was cool and clean-tasting alongside the meat. The restaurant was also clean and comfortable, making it easy to have a relaxed meal. If you like beef, I think this is a place worth visiting at least once.
