The weather's been so nice lately that I went on a drive out to the Simhaksan area in Paju for something delicious. There are so many great restaurants in the Simhaksan food alley that I end up there often, and this time I stopped by 'Fruit Forest Paju Direct Store,' a fresh-fruit dessert café that fruit lovers apparently can't just walk past.

The biggest draw here is that they use only 'top-grade fruit hand-selected at the first auction of the wholesale market every dawn'! The fruit that comes in goes through a ripening process in-store to reach peak sweetness, and it's cut only once a customer orders. I peeked into the showcase and the fruit really was fresh and impressively large.

## How was the fresh mango snow bingsu?

We ordered the fresh mango snow bingsu, the one we'd been most curious about. The second it arrived, my jaw dropped at the sheer visual — most bingsu shops use frozen mango or fruit with slightly disappointing sweetness, but Fruit Forest piled on properly ripened fresh mango so densely it looked like it might overflow the bowl.

Because the mango is sliced right when you order, the flesh had zero mushiness — plump and firm, yet it melted the moment it hit my mouth. Scooping up a big spoonful with the snow ice, the juice burst out and it was seriously sweet. It wasn't an artificial sweetness but the fruit's own deep, clean sugar, so I never got tired of it till the last bite. I understood immediately why everyone raves about it as 'Paju's best mango bingsu spot' after just one bite!
