On August 31st, I went to Hwaro Yangmi Gwanggyo Sanghyeon Station Branch because I wanted to try lamb in several different cuts.

You can order shoulder rack or French rack as single items, but this time I went with the 490g Special Mixed Set so I could try a bunch of cuts at once. After the meat, we also had beef noodle soup, a warm noodle dish, to finish up.

Of these, we had the 490g Special Mixed Set and beef noodle soup. The Special Mixed Set is currently listed at ₩54,000 on Naver Place.

As in the first photo, several cuts of lamb come out together on a big wooden platter, with king oyster mushrooms in the middle, so it looked quite generous the moment it landed on the table.

The main reason I picked the Special Mixed Set was that I wanted to taste multiple cuts at once rather than sticking to just one.

Lamb cuts differ in thickness and fat distribution, so it was fun comparing them side by side on the same plate. If you don't eat lamb ribs often, this kind of mixed menu is probably an easier choice than picking one specific cut from the start.

## Basic side dishes that paired well

The basic side dishes included myeongi namul (mountain leek pickle), pickled onions, seasoned cabbage, peanuts, chili peppers, and wasabi. Eating the lamb plain for a while and then adding myeongi namul or pickles here and there changed the way even the same meat tasted.

When you're eating several kinds of meat, you need something to reset your palate now and then, and having tangy pickles and vegetables on hand meant my hand kept reaching for them in turn.

## The thick lamb ribs that caught my eye first

The one with the most presence on the Special Mixed platter was, of course, the bone-in lamb ribs.

Even in photos, they were noticeably bigger and thicker than the other cuts, so they caught my eye first on the plate. In its raw state you could see both red meat and fat, and once cooked, it was cut into bite-sized pieces and arranged together on one plate.

Once the grilled meat was gathered together, the whole vibe was completely different from when it was raw — pieces with a golden-brown surface mixed in with pieces that still had a bit of red inside, which made it look really appetizing.

## The fun of alternating between lamb sirloin and other cuts

As in the photo, having thick chunky pieces alongside long rib-shaped pieces gave more variety than sticking to just one kind.

You could use the basic accompaniments like salt or wasabi, or pair it with myeongi namul or pickled side dishes, so it was easy to switch up the combination throughout the plate.

## The marinated meat felt like a different dish altogether

The Special Mixed Set wasn't just raw meat — marinated meat came out alongside it too.

The red-marinated meat was placed separately on one side of the platter, so it was easy to tell apart from the other cuts. Since it wasn't something we ordered separately but rather one item mixed in among the raw cuts, it made the whole mixed-set composition feel less monotonous.

After eating the meat, we ordered beef noodle soup.

It came out in a big black bowl generously filled with noodles and broth, topped with beef. After having eaten quite a bit of meat, I debated whether to add a meal item, but I wanted warm broth rather than cold noodles, so I went with the hot version.

Eating the noodles and broth together, then adding a piece of the beef on top now and then, made it a great closing dish for a barbecue meal.

## If it's your first visit, the Special Mixed Set is an easy choice

What stuck with me most at Hwaro Yangmi was the Special Mixed Set, which let me try several forms of lamb on one plate. If you already know which single cut you want, shoulder rack or French rack would work fine, but if you're like me and want to compare a bit of everything, the 490g mixed set was the more comfortable choice.
