I was looking for a place in Siheung where I could enjoy cypress steamed dishes (pyeonbaek-jjim) and shabu-shabu together, and that's how I ended up at Pyeonbaek Hoegwan Siheung Janggok Branch. This location had a renewal opening on September 9, which changed both the interior and the food flow. Before, using the self-serve bar meant walking a bit depending on where you sat, but now the food counter has moved to the center of the store, so it's easy to access no matter where you're seated.

As soon as you step inside, there's a banner introducing Pyeonbaek Hoegwan. It's a place where you can enjoy cypress steamed dishes and shabu-shabu together, and with the Siheung Janggok branch's fresh renewal, everything looked even cleaner. When I visited, there was also a renewal-opening event going on, so there was plenty to look at even before eating.

Walking into the store, the first thing you notice is the clean, spacious interior! What I liked most about this renewal was the position of the self-serve bar. With the food gathered in the center of the store, it was easy to grab ingredients no matter which table you sat at. ## Meat and broth: take as much as you want

There's also meat prepared for the cypress steamed dishes and shabu-shabu. If you love meat, I'd recommend grabbing just enough to eat right away rather than piling on too much at once, and cooking it fresh each time. Next to it, shabu-shabu broth is also ready to go, so it was easy to refill whenever the broth ran low during the meal.

## What's on the shabu-shabu self-serve bar?

When I'm looking for a good shabu-shabu restaurant in Janggok-dong, one thing I pay attention to is how the self-serve bar is stocked. There were plenty of vegetables that go well with shabu-shabu — bean sprouts, bok choy, mushrooms — plus noodles and various other ingredients. On the other side, there was salad, shredded vegetables, onions, and other things that go well with the cypress steamed dishes, so it was easy to build a plate to your own taste.

Best of all, with the self-serve bar laid out in a long line down the center, it was easy to find what you wanted and the whole flow felt simpler.

The tableware was also neatly gathered in one spot, and there was an event for families visiting with kids. With the store being spacious and the self-serve bar separated from the table area, it seemed like a good spot for a family meal out.

Not just having the main dishes but being able to pick and choose extras is one of the strengths of this all-you-can-eat spot in Siheung. There were various foods set up in the center, plus ice cream for after the meal. Going cypress steamed dishes → shabu-shabu → side dishes → dessert, you could put together a pretty satisfying meal, right?

Drinks were also available, so I could grab one easily throughout the meal.

Finally, the real meal began! The cypress steamer pot lands on the table like this, and just looking at it made me feel like I was in for a proper spread. Once I added the vegetables and side dishes from the self-serve bar, the table filled up quickly.

Lifting the lid reveals bean sprouts, napa cabbage, bok choy, mushrooms, and meat, all packed into the cypress steamer. Eating the moisture-soaked vegetables together with the meat was a great combination, and it was easy to grab more vegetables as needed. I liked that this isn't a one-dish-only meal — you can enjoy the cypress steamed dish first, then move on to shabu-shabu.

I tried wrapping bean sprouts, meat, and shredded cucumber in rice paper. You can eat the cypress steamed dish as is, but wrapping your own ingredients like a Vietnamese-style spring roll added some fun to the eating.

Dip the finished wrap in sauce to taste. Simple wraps with just meat and bean sprouts were good, and packing in shrimp and various vegetables for a fuller bite was also delicious. The flavor changes depending on the sauce, so the same ingredients could be enjoyed in different ways.

Once you've had your fill of the cypress steamed dish, it's shabu-shabu time! Bring the broth to a boil, then add meat, mushrooms, bok choy, bean sprouts, and other ingredients from the self-serve bar however you like. You can keep adding meat little by little, so it's easy to eat it warm right as it cooks.

The real charm of Pyeonbaek Hoegwan is that the meal doesn't end with the cypress steamed dish — you can move right on to all-you-can-eat shabu-shabu. So if you're looking for a good shabu-shabu restaurant in Siheung where you can enjoy several dishes generously, it's worth a visit.

By the time I stopped to look, the table ended up like this from all the eating haha. And I got an unexpected small gift during my visit — a cypress wood cube to mark the renewal opening of Pyeonbaek Hoegwan Siheung Janggok Branch! At the time of my visit, it was being given out to the first 500 customers, so I made sure to grab one. Since it's a limited-quantity event, it may have ended by the time you visit, so keep that in mind.

The fragrant cypress cube is nice to bring home and use, and being a renewal-opening keepsake made it extra memorable.
