Sometimes I crave gentle, neatly prepared Korean food that sits easily on the stomach—or bibimbap (mixed rice) piled high with seasoned vegetables and mixed together. Today, the table was filled with everything from colorful seasonal vegetables to fritters, stew, and pork, so I left feeling wonderfully full. With so many side dishes available freely from the impeccably organized self-serve bar, this feels like welcome news for anyone looking for unlimited-refill barley rice in Suwon.

As we arrived by car, the restaurant immediately caught my eye as a roomy standalone building. There is parking directly in front, and the restaurant notice says there are additional nearby spaces as well. We visited outside peak dining hours, so there were plenty of open spots out front and parking was wonderfully easy. At the usual lunch and dinner rushes, waits can be long, and I heard you may need to reserve through Catchtable or register on site—something to keep in mind before visiting.

Once inside, the dining room felt very spacious and pleasant.

There was a good variety of seating, from tables for four to larger tables for groups, so it looked ideal for family meals or small gatherings. In particular, the walls had elegant mother-of-pearl-style details that brought to mind an old grandmother’s country home, making the space feel both more refined and warmly familiar.

Ordering was easy through the kiosk placed at each table. This time, we chose one barley rice set meal and one soy sauce pork set meal.

Above the kiosk was a Boriook meal guide, along with a notice that a receipt review earns a complimentary serving of neobiani, thinly sliced marinated beef. After completing our order as instructed, we headed straight to the self-serve bar for side dishes.

## A large, meticulously kept self-serve bar

The biggest draw here was undoubtedly the self-serve bar, kept exceptionally clean. There were no splatters of seasoning or messy corners around the dishes, and that immaculate first impression really won me over.

Along with unlimited-refill Suwon-style barley rice and white rice, the system lets you take as many varied side dishes as you like. One line held crisp, freshly made geotjeori kimchi (lightly seasoned fresh kimchi), tangy-spicy shredded radish, and fresh wrap vegetables. Beside it were bouncy acorn jelly, fragrant barley rice, and moist white rice in generously filled large rice cookers. All the essential sides that a Korean to the bone would love were nicely in place.

At the vegetable station, there were plenty of sides perfect for bibimbap: fragrant chwinamul greens, pleasantly bitter balloon flower root, crisp seasoned bean sprouts, soft and earthy bracken fern, savory stir-fried mushrooms, refreshing young-radish kimchi, crunchy stir-fried seaweed stems, and lightly salty perilla-leaf salad. The seasonal fritters were especially memorable. They were as crisp as ones from a dedicated fritter shop, yet not overly hard when bitten into. Even after being set out at the bar, they seemed very carefully managed for temperature and storage.

Next came a pot of hot, nutty sungnyung (scorched-rice tea), japchae (glass noodles with vegetables) generously filled with bouncy wood ear mushrooms, and golden pan-fried tofu. The japchae stood out for that lovely springy wood ear mushroom texture. It was just slightly sweet, but it had the classic crowd-pleasing flavor that everyone from children to adults could enjoy.

The thoughtful dessert area was also perfect for freshening the palate after the meal. Along with savory, crisp puffed rice and rice crackers, there was a freshly brewed bean-to-cup coffee machine, sweet and cooling maesil tea (plum tea), and peach tea—everything needed for a perfect finish.

## A full set meal of cheonggukjang and soy sauce pork

After excitedly filling our plates at the self-serve bar and returning to our table, the main dishes we had ordered—soy sauce pork and cheonggukjang—were set out in stew pots. Looking over the full tray made the table feel abundant before we had even begun. I started with a spoonful of cheonggukjang, fermented soybean stew. Rather than the usual sharply pungent style, it had a distinctive, appealing character, as if doenjang soybean paste, cheonggukjang, and nutty biji soybean pulp had been blended in just the right proportion.

Its signature fermented aroma was not too strong, while its deep savory richness was never lacking. The balance was just right, and even spooning up the broth alone made my stomach feel soothed and clear.

Next, I tried the soy sauce pork. It looked as though it had been grilled directly over a wire rack, with a gentle smoky aroma and savory sheen. The seasoning leaned a little sweet, but its nutty, savory flavor clung beautifully to the palate. The pork itself was tender, and its flavor deepened as I chewed, making it excellent with barley rice or wrap vegetables.

My favorite side dish was the braised tofu, seasoned in a duruchigi-style saucy marinade. The tofu itself was wonderfully nutty and firm, and I could immediately tell that good ingredients had been used. The sauce was neither overpowering nor excessively spicy; a gentle, slightly sharp heat drifted through its mild flavor, allowing the tofu’s natural nuttiness to shine.

## How to make vegetable-packed barley bibimbap

Now it was time for the main event: making barley bibimbap. Looking closely at the barley rice served in a wide bowl, it was cooked just slightly soft. Fluffy, separate grains are lovely too, but I really liked this softer barley rice, which seemed to go down more easily and feel much easier to digest afterward.

I layered chwinamul greens, seasoned bean sprouts, bracken fern, balloon flower root, and more from the self-serve bar over the rice. Each vegetable side was cleanly seasoned rather than salty, so they were delicious even on their own, but their flavor synergy really shone when mixed together with the barley rice.

Below the table kiosk, you will find containers of nutty sesame oil and red gochujang bibimbap sauce. I opened them, drizzled on a suitable amount of gochujang and sesame oil, then mixed everything briskly with a spoon.

I kept adding crisp geotjeori, seaweed salad, and acorn jelly in between, so I never had the chance to tire of it.
