The full spread is incredibly hearty. Fluffy white rice, salad, pineapple, pickled radish, red cabbage pickles, kimchi, and wasabi are all laid out in a colorful array, and since rice and side dishes are refillable, Bizzle Donkatsu really is the best ✨

On the side there's a bottle of tonkatsu sauce and a shaker of Himalayan pink salt. The sauce bottle even has the expiration date written on it, which gave me a lot of confidence in how seriously they treat their food ☺️ (there's clearly a reason this place does well...)

### Sirloin katsu: 3cm thick with pink inside

Bizzle Donkatsu's sirloin katsu is nearly 3cm thick, and when you slice through it, the cross-section has a faint rosy tint — apparently that's not undercooked meat but 'pinking,' a phenomenon that shows up in good-quality meat. They're confident enough about it to put up an explanatory sign in the restaurant.

Bite in and the coating shatters crisply first, then warm juices slowly spread through. What's impressive is that the fat never dominates — the clean, natural sweetness of the meat stays front and center. Just a sprinkle of Himalayan pink salt makes that clear sweetness even more vivid, and dipping it in the tangy-savory tonkatsu sauce turns it into a completely different flavor.

### Kimchi nabe: the quiet star of the table

The kimchi nabe (hot pot) on the side turned out to be the hidden star of the combo. The broth carries the spicy kick and deep umami of well-fermented kimchi, and the thick udon noodles soak up plenty of it. Eat some katsu, then take a spoonful of broth — your palate resets completely and you're reaching for the katsu again, an endless loop 😣

## Verdict: is Bizzle Donkatsu worth it for tonkatsu in Pangyo?

Being able to get tonkatsu of this quality in the middle of Pangyo Techno Valley for the low-to-mid ₩10,000s is Bizzle Donkatsu's biggest draw. The crunch of the coating, the clean sweetness of the meat, the nuttiness of the cheese, and the spicy kick of the nabe keep shifting throughout the meal, which makes it a happy experience all the way through ❤️🔥

If you're trying to figure out lunch in Pangyo, Bizzle Donkatsu is worth a visit as a go-to tonkatsu spot in the area. Parking is easy and tables turn over fast, so it works well for a workday lunch or a weekend family meal ☺️
