It’s Teukbyeolhan Chobap (특별한 초밥), already famous as the king of conveyor-belt sushi near Yeongtong Station. I’m pretty picky about sushi and sashimi, so most places don’t quite satisfy me, but this is a real Yeongtong gem I visit regularly for a recharge: from the freshness of the ingredients and seasoning of the rice to, especially!!!!, the value, there’s nothing to fault. Sure enough, there was a wait as soon as we got to the door. About seven parties were ahead of us, but turnover is fairly quick with conveyor-belt sushi, so we waited around 20 minutes and got seated right away. Honestly, I usually don’t expect much from sushi-restaurant udon and order it just to sip the broth, but this place is quietly an udon gem! It’s generously loaded with crisp, nutty tenkasu (tempura bits), so the broth’s umami is no joke. The noodles are springy and chewy too; taking a bite between rich pieces of sushi feels like the grease gets washed right away. I think a place has to do basic fresh fish well to be truly good at sushi, and this flounder has that wonderfully chewy yet springy texture, with zero fishiness. The more you chew, the more a gentle sweetness comes through. It’s not on the printed menu but appears on the tablet menu—a real insider pick. Even in the photo, you can see it’s packed so full that it’s hard to fit into one bite, right? Tender fish, egg, crisp fried bits, and crunchy vegetables all come together beautifully. Just one fills your whole mouth—it’s ridiculously satisfying. The ingredient balance is truly excellent.
