Blood curd, bean sprouts, ugeoji (dried leafy greens), glass noodles, and meat filled the bowl to the brim. One bowl of basic haejangguk is filling on its own, but adding the tripe salad makes it even more plentiful. Jeju Eunhuine Haejangguk Suwon Ingye Branch (제주은희네해장국 수원인계점) had generous amounts of blood curd, meat, bean sprouts, ugeoji, and glass noodles, plus a properly spicy broth that really did the job! The atmosphere is comfortable for solo dining, extra rice is free, and most importantly, parking is available in Ingye-dong—a rare perk.
